fermented grains

I soaked 40lbs of WBS in a rubbermaid in my tub with a couple cups of gypsum for roughly 18 hours. When draining I noticed a foul odor, much like puke. The WBS was drained and still smells. I used a pH strip to test pH, it is between 5-6. I know that this is too low. Can I add lime to correct this?

calcium carbonate and did you rinse the grain really really good?

I wonder if the sulfate in the gypsum was bio-converted into a more odiferous form of sulfur. . .Straight birdseed, when left soaking for too long [not that 18 hours is too long], can smell but it's not a puke smell. Was adding gypsum at the soaking step an experiment? I can't say I've read everything around here, but most gypsum use seems to involve adding it dry to jars post-draining.
40 lbs is a lot of grain, man! Good luck

I was also confused why it seemed to ferment so quickly. I was unable to find calcite in the city. What is normally used for? I checked Home Depot, Menards, and several nurserys. Since I couldn't find calcite, can I use the WBS as is?
