Yes, dunk after birthing. Fully colonized cakes are pretty spongy and difficult to tear apart, if your cakes fall apart on dunk they were not even close to colonized. So when you think your cakes are colonized, just open the jar up, pour some water in there till the cake is submerged (it floats out of the jar a little) or the jar is mostly full of water, then put the cap back on (watch out because some water will spill). Then stick in fridge for 24 hours (or less is fine), remove from jar and place in terrarium. Do not towel off or anything, it is unnecessary, the water will evaporate in an hour or less.

Yes, for safety reasons since a fridge is pretty contam prone.
