If I can keep the cakes wet constantly through the day do I need to have to bottles on at all during this time?
Are the bottles just to keep the cakes from drying out?

You need SOMETHING , even if its a bottle, that doesnt gush humidity. If left out, they dry up within a couple hours. That's silly. They still look dry.
Listen man. Dryness is mushroom death.
Mushroom= 90% water
You want evaporation of moisture from the cake. That's the 1st strong pinning trigger. for evap to occur, there must be moisture there in the 1st place... Staring at it won't wet it. Manually intervene.
Mist & fan heavily every 6 to 12 hrs. Put it in something that retains high humidity but that breathes slightly so c02 can escape

Day 2 Nighttime. The one that was dangling fell of midday along with a few small pins and the biggest one has its veil beginning to break so I'm picking it.

Oh, it was on a jar lid at first. This caused it to allow light in to the bottom from the edge and also because the jar lid was flat it allowed a LOT of humidity there so pinning occurred due to those triggers. From now on I use foil because it sticks and forms to the bottom of the cake and stops both that light and humidity

Ha good call, yea off the one that fell, the pins and the one I actually picked today I got just under 10g wet. I've started drying them and they've lost over half the weight within 3 hours. Fan drying is pretty efficient if you don't live somewhere too humid

Your bottom pins weren't caused by light leaks. Most likely it was an area of good moisture. Cakes pin all over at the whim of the mycelium. Don't sweat it & don't sweat preventing it. A pin is a pin and take any where you can get them

from my understanding wet weight is about 4x what it will weigh dry, not always tho, but its a good estimate <<please correct me if im wrong

mushrooms are about 90 percent water so they should dry to about 10 percent of the wet weight

Day 3: some veils broken some breaking. I picked the 3 larger ones today for another 6 grams wet. And yes, that 5 grams wet yesterday has dried to about half a gram.

Doesn't look as great after losing those big ones but I have them drying already. I think I've found the laziest way to dry shrooms ever.. Although I'm sure someone beat me to this haha.

So after I picked about 10 grams wet off of that cake, there were still pins on it and I considered this a fist flush still. But none of those pins have grown in days, and some at it bottom that were touching perlite had their caps burst or break off.
Is this a result of direct contact with perlite?
I do have foil underneath but the perlite moved quite a bit. The others not at the bottom seem weak and bendy, not like the first pins at all.
Am I doing anything wrong to cause this?

I have 12 jars of PE colonizing I plan on doing two small casing in the same tub after these cakes. But for now I'm excited to see what 8 cakes in a shotgun since birth can do. The others were grown in weak terrariums for first flushes
