Grey Oyster Grow

Welcome to my first oyster grow!!
After half a year of intensive cube projects, I've decided to move on. This time I'll be growing Grey Oysters.
So here we go: Spawned 2 large aspen woodchip/sawdust bag's a little over a week ago. They both colonized quick, and have been consolidating for for the last 2-3 days. During this time a 3-4" layer of fluffy mycelium grew from the surface of the sub. Also, while the bag's colonized little pockets of water formed inside the bags.

Today- 5/23/23 - Cut small X's into both bag's an have placed them into my GH. Small computer fan mounted in the back turns on for 1 minute every 15 minutes. Coolmist pipes in moist air for 30minutes every 3 hours. Currently sitting around 80-90% humidity in the GH.
*Noticed a fishy (vagina) smell coming from one of the two bags after I cut little holes in it. I realized the smell was coming from the water that had pooled in the bags while colonizing. I drained the water from the bag completely, and then quickly wiped the outside of the bag with iso alcohol. I opened the top of the bag and smelled all the little holes again. All I could smell was nice sweet mycelium with a hint of aspen Figured it was safe and tossed it into the GH.
So here's the GH up and running:
5/26/13- Still no pins. Fingers crossed.
5/30/13- Second computer fan wired into GH. No sign of any activity.

6/2/13- UPDATE! PINS!!

Here's the current set up-

6/03/13- GH just got a little more crowded. I'm sure the oysters wont mind a little company.

I always fruit from the bag and spray water inside whenever they seem dry. Whether not that is on the first flush depends on current available moisture levels

What about the fishy smell from the water that drained? Have you ever encountered that issue before? What do you suppose I should do about it?

It's probably just funky water from bacterial growth. Just get it outta there & it should be ok. Oyster mycelium is extremely strong and resilient

I let all the excess water drain from the funky bag, and then quickly wiped down the outside with iso alcohol. I rotated the bag and smelled all the holes- only nice sweet mycelium smell. Figured it was safe, and placed it in the GH.
I went ahead and cut x's in the second bag and tossed it next to the first one in the GH. I'll be using this thread as my Grey Oyster Grow journal. I'll update every few day with pictures.

So I guess I'm not the only one who noticed this. Looks like I'm in the clear on that one. I hope I didn't let them sit too long they were only spawned on the 14th.

They grow fast and get hard on grain fast. The fridge slows them down but not fully. Refridgerate until needed. Digging out grain with a butter knife is best avoided if possible.

I've been a little busy over the last few day's but I've got some picture's to share.
This is basically my GH setup:
I've moved the light so it sits directly above the GH instead of at an angle. I'm also going to radio shack today to pick of a AC-DC variable voltage power supply, and 2 computer fans to mount in the middle and top of the GH. I think one small fan I have mounted is not supplying enough FAE for the oyster bags.
When should I expect these guys to start pinning? How long does it usually take to see anything after placing oyster bags into fruiting conditions?

Got the second fan wired in yesterday. Complete air exchange in about 8 seconds. I have it dialed in at 10 seconds on every 30 minutes. RH flucuates from 99 to 85 in between exchanges.

Still no pins.......

I like the setup. Those things should be fruiting soon. I just cut the tops off of my bags They pin within a couple days like that.My way is not the most famous way to grow oysters though.

I hope so man. I've been staring at these bag's for a week waiting for something to happen. I think the second fan should really help speed up the process. I've read that oysters demand FAE so hopefully this will do the trick.
You think I should cut the tops off? I've been considering it since I set them in the chamber. i can't really find anything that explains the benefit of fruiting through holes, it just seems like the most popular method so I figured it was the best.

You are going to have to make that call man. That is how I do mine. They produce a lot of pins like that for me. I just put 3 bags in my GH 4 days ago this is what I have so far.Those are not the best pics but I was trying to hold a camera and a flashlight while being fast. You can see a few clusters there there are more forming on the blocks. You may want to give yours a few more days.

WOw! Looking good, thanks for sharing What type of oyster is that?
I've leave mine the way they are for a few more day's. If nothing happens, I'll remove the tops.

I am not sure what type it is.all that I know is pleurotus ostreatus It is my avatar. I found them in January and cloned them.

I wouldn't worry about air exchanges until you get pins. They seem to need more humidity for pinning, THEN air exchange for proper fruit development. Although I'm definitely no expert, that's just been my experience. It can also vary by species which leads me to a stupid question - I've never heard of gray oysters, are we talking p. ostreatus? p. columbinus? or another one I don't know about?
Previously I would have said relax, they'll pin - but I'm currently having troubles with some pinks myself. It's been weeks and no pins. When I did phoenix and blues, I couldn't stop them from fruiting.

My humidity is relatively high, especially compared to other oyster grows I've seen on the forums.
I'm starting to think it may be my temperature. I'm sitting 70-75F. What temp did you fruit the blue and phoenix at?
