Dunking question.

When dunking cakes, do you add H2O2? Also, should the water be "refridgerator" cold or colder?

adding a little h202 is a good idea to control contams, also since you are putting the cakes in the fridge after yuou dunk them....i hope since cold shocking initiates pinning quicker(i know people disagree)... the temp of the water wouldnt really matter...if you are not putting them in the fridge, then refrig cold water is fine. but try and dunk/refrdge them

i always use a little h2o2 and i also dunk the cakes in the fridge and usually get pins within 48 hours of putting the cakes in the fruitin chamber after dunking
