Temperatures for Pouring Agar

Hi.

When pouring agar from glass bottles to petri's, i'm finding it difficult as its too hot to hold. I have read that there's a minimum temperature in which the agar solution is still liquid, but how does this translate to how many hours I should leave in the PC before it becomes unusable? Ambient room temp will be approx 77 degreesF.

Im about to do a batch now, and considering three hours after power off. Too much?

Wait until the agar cools to the point where you do not need heat protection to hold it, then pour away.

I leave it in the pc until the side of the cooker is comfortable to touch.  Just did a batch tonight, though I didn't time it. I would say it takes about 2.5 hours to get to the right temp.

This all depends on the amount of water in the PC.

I take the agar out after 2 hours, just like RR does in his videos.

If I leave the agar in the PC, 4 hours later it will still burn you.

It all depends, but what is clear, is that if you wait until you need no heat protection to hold it, you will be good.

True with my AA, not so with the presto.  When I run a single jar or anything small I use the presto.  It's a cheap POS but works well for smaller things.

Cheers guys. I popped the lid off after it naturally depressurised (with the weight on) and after a couple of hours it was good to go. Slightly too long, as it started to set at the bottom, but a good shake fixed that.

as a former cook, I have heat tempered hands.  So I can basically pour it as soon as the stopper drops on my PC.  :grin:

It's still best to let it cool some before pouring, since a large temperature difference between the inside and outside of the dish leads to condensation. Agar solidifies around 100F.

I wrap a sanitized, quadruple-folded paper towel around my jar and pour at about 56C (132.8F).

I stack the dishes and cover them with the plastic slipcase they came in.  Sometimes the top one will condense moisture, but I will use it first and simply dump the moisture before inoculation. 

I don't think there would be a problem pouring a few degrees cooler if you only have one jar to pour.  I usually have 5 or 6 jars to pour, each making 20 plates, so by the time I get to the last jar, the temperature is quite a bit cooler.
