So I made a monotub last night, so it's kind of a non-issue at this point since it's already a done deal, but......
I pasteurized a la Frank's method in jars - timed @ 70 mins once it hit 140 degrees, leveled off around 155, didn't go over 160. The hpoo I had was dry and just smelled like dirt/earth/soil. I let my pasteurized hpoo jars cool overnight. When I went to spawn my tub, the hpoo didn't smell so great My bf said to put that shit up, it smelled like a fish tank I mean it kinda makes sense, if I'm cooking what amounts to a shit casserole, it probably won't smell great, but everything I've read on here says the hpoo should smell like dirt and be dry, which it was. I mean it wasn't an overpowering vomit-inducing smell, but it was certainly not pleasant. Of course, once I put the lid on my tub, you can't smell it, but I am concerned because my poo kinda stunk. Is this normal? I kinda wish I would've just used coir instead, but too late to turn back now. I hope I don't lose 8 qts of spawn due to stink-poo.

I've never had that problem with mine but I also never let it set more than 2 or 3 hours TOPS.
Now occasionally I'll forget to empty the water I cooked it in out of the roaster and the next day it smells like the backside of a fish packaging plant. I'd say you let it sit too long or simply didn't get the bad germs pasturized out of it. I do know that I had a lot of horse poo tubs that soured before they colonized because I didn't put enough spawn in them, using popcorn, and they went sour instead of colonizing and took on that same fishy smell or a smell of soured, rotting, hay in the tubs I did mixes of.
At the very least I can confirm that if it smells earthy and fresh, like good compost, when you're done then you're on the right track.

That's one thing I did not consider - so do you use your pasteurized sub like immediately after pasteurization is done? Maybe by leaving them in the jars overnight, they stayed too hot for too long and activated some latent bacteria (idk i'm not a scientist, but you know..) I thought it would be preferable to have my substrate cooled before using, but you say you use yours within 2-3 hours tops after pasteurizing? hmmm

I do use a different method so I couldn't say for sure.
I just cook mine in a turkey roaster inside of a pillow case at roughly 160 and let it drain until it's cool enough to spawn to, which I just wait until its a tiny bit cooler than my own skin temp. Then I twist the pillow case and press it to remove all the excess moisture then spawn to it.
Generally takes about an hour and a half to two hours to get to the right tempurature. I figure the longer it sits without being colonized by mycelium the greater the chance something else is growing in it's place.

I know since my spawn was multispore, it would be difficult to hazard a guess, but how long after spawning to bulk does it take before you notice visible colonization? I see some people on here 12 hours later starting to see something. I'm kind of expecting this tub to be a loss now, would you venture to guess if I don't see any signs of life within 4-5 days it's probably a goner? (I made this tub about 10 hours ago).

My shredded horse manure smells earthy ... ok.
When it is brought to field capacity (wet) and pasteurized it smells a little funky. I mix horse manure with coir, vermiculite and gypsum.
There is no noticeable smell when the lid is on the tub as you say. Once the substrate is colonized the smell is mushroomy.
Even perfect horse manure smells a little funky when it is wet.
edit. for your post .. I see the spawn start to regrow in about a day and at day two it is colonizing the sub. at day three colonization is well underway and 100% happens around day 6 to 8.

You can not spawn immediately you will kill the spawn it must be cooled. next time go with coir there is no difference in mushrooms grown on coir or manure and coir is much easier.

No, I didn't use a frosting layer, or even a thin layer of sub on top. I just mixed it all up evenly in the tub.

Yes, I also did a hpoo/coir/verm/gypsum mix. And yeah, my dried shredded hpoo smelled just like dirt/soil, no poo smell. And while I was pasteurizing, there was no smell wafting around the kitchen, lol, I just noticed the sorta-funk as I undid my sub jars and was spawning to my tub. So it smelled fine up to that point....I guess we shall see how it goes I've read all kinds of stuff on here saying how the hpoo should smell when you collect it, but I never read anything about anyone thinking their hpoo kinda smelled like funk after pasteurizing, so I'm sitting here worrying myself about it But what's done is done!
