bulk substrate trays smell kinda pungent, yet no visible contams, problem?

fully colonized rye berries spawned to worm castings, vermiculite, and gypsum. the mycelium is bubbling through the substrate, but it smells somewhat pungent and sour - there are no visible contams though. the substrate was pasturized in an oven at 170 F for an hour. the trays are currently covered in aluminum foil with very slight holes for a small amount of gas exchange. is the smell indicating a possible contam problem inside the bulk substrate? or could it be the bulk substrate itself giving off its own odor? it is slightly worrisome.

Which is not pasteurization at all. The center of the substrate needs to be AT 140F to 170F for an hour, which would probably take at least two to three hours in a 170F oven. I'm sure the smell is bacteria. RR

sorry, that's what i meant. had a meat thermometer inside of the substrate and it was at that temp. for the required time.

Just out of curiousity, what does bacterial contamination do in a case like this, where it sounds like the mycelium is already well-established? Is the contaminated substrate potentially dangerous to have around? Will it kill off the mycelium, or prevent fruiting? Do you have options with this kind of contamination, or is it hopeless to do anything with it but throw it out?
I searched around for answers, but the questions are awkward to word in short, searchable phrases, so I didn't really find anything.

Normally, bacteria in a bulk substrate is not a problem. If it gets out of hand, it can prevent fruiting. We pasteurize to make sure some of the bacteria survives, while killing off the mold spores. The biggest problem usually is the stink, which normally disappears at full colonization. RR

Ive been know to incubate my trays a lot warmer then they should have and thus it killed my mycilum and spoils. And smells. Only half or so would colonize.. Thats what I figured I was doing wrong anyways.
