my lady is mighty happy, being a chef and all, were eating in style tonight, fresh chanterelles.

the trick is basically look under birch trees, just drive aroun d the country and look at the base of birch trees from the car, chants are bright yellow.

ohyeah i also found a few thousand Pan casters fruiting on a boulivard, but theres too many people around now, gotta wait till later, will have pics of that too :smile:

yeah, of course silly me i thought i would sample one straight up raw,
DO NOT DO THIS, it is disgusting, like worse than laughing jims.
just goddamn terrible, like peppercorns, soap and vomit.
im rather curious to see how these things could taste good.
im told they are better than morels and just below truffles for deliciousness.

They are one of the mushrooms that needs to be cooked. The flavor is not at all peppery after cooking.

I consider the taste of raw chanterelles closer to a dead centipede, but i can see where your coming from. Once you cook em up they should taste excellent, although i do consider morels to be slightly tastier.

yeh, it's weird how the taste changes with chanterelles once you cook them for a few minutes. But they are the most delicious mushroom I have ever tasted, ever!
I usually make a stew of them. Fry them in plenty of butter and some garlic, then add cream and a bit of flour plus your favourite herbs n spices. Serve that with some game meat or a steak with some tart jam/jelly (cranberry is good) and you are in for a spectacular tastebud treat extravaganza!!!
