Lamb and lentil soup.
    #17927798 - 03/09/13 03:58 AM (11 years, 1 month ago)

So i promised id post this in the "whats for dinner" thread.

This recipe is nothing uber spectacular, but its good and hearty.

Lamb and lentil is a popular dish in some parts of the middle east and my recipe was inspired by those dishes

here's the ingredients (aprox)

a few pounds of lamb (1-2) (I used the bones from 2 lamb shoulders which had some meat on them)
1 cups of mung beans (shelled)
1 butternut squash cubed
half an onion diced
half a head of garlic. diced
1.5-2 tbs cumin
1 tbs tumeric
1 tbs paprika
1 tbs ground black pepper
1/2 tbs garam masala
salt to taste

1. first cut up the meat and braise it with the onions and garlic in your pot

2. add water then spices along with the mung beans and squash.

3. once the beans and squash are cooked mash the squash in the pot with a potato masher to thicken it.

4. that's it!  super easy, but it just takes a while to cook the stock etc.

I opted for squash for the slight sweetness and i think it turned out great, but feel free to add something else instead if you want or just add more mung beans!

so there you have it, easy and good - nothing fancy just good.

You can taste the beans + cumin and IMO it goes well with the taste of the lamb

you could eat this as is, on top of rice, or with some bread!

Lentils are awesome...but I'm kind of puzzled about your ingredients list - they're not in there!

Shouldn't it be called 'lamb and mung bean soup' then?

perhaps, but i believe mung beans are a type of lentil (correct me if i'm wrong) and you could also substitute any other kind of lentil you prefer

Nah, mung beans and lentils are really different things, but I agree that you could substitute just about any kind of bean in your recipe  However, lentils have this particular flavor that no other bean has, so I'd recommend trying your recipe with actual lentils (I'd prefer the brown/grey, relatively large ones; not the small red ones) for the best flavor experience

Btw, both lentils and mung beans are pulses, perhaps that's what confused you? Or perhaps you bought shelled and split mung beans, they look a bit like lentils. Whole mung beans don't look like lentils at all (google images) and the somewhat think skins might not be pleasant in a soup recipe. I prefer to use (whole) mung beans for sprouting.

OH, i suspected something like that

Honestly i dont know the difference

In indian cooking they call those types of "Dal" beans "lentils" a lot.

That's probably what put me under that impression.

Thanks for the correction though, trying real lentils next time is a good idea but that said, the mung beans worked out pretty good IMO.

This is the first time ive ever made a lamb soup so im pretty happy.

Oh, I don't doubt the soup came out great  I was nitpicking anyways, there's no reason not to use the bean of your choice in this recipe - or any other! I myself am a sucker for lentils though, so I was all :crankey: when I didn't get my lentil fix in your thread

Don't bother posting a pic of how it came out after you ate and digested it though, even if you argue how it really looks exactly the same

you know, i tasted it again and its really pretty good!

you get the bean / cumin etc. but the sweetness of the squash comes through well so its not too intense.

Then you have the overall lamb which i think does good with the rest of the soup!

I'll have to remember this one and try it with real lentils next time.

The color looks good, and it also looks a bit chunky, which is as it should be IMO

Dishes like these are always better the day after. The flavors develop over time, so whenever I feel particularly organized, I try to make dishes like these a day (or even two) in advance. Coincidentally, that's also a great solution for those days you get home late and you're tired and don't feel like hitting the kitchen. Nothing beats being able to just ladle some delicious slurry into a cup and nuke it in the microwave.

I made sure not to totally mash it, i could have left it even more chunky but i like it thick :cool:

i just made a sick lamb dish

garlic , onions, olive oil, butter, lamb, white wine, potatoes carrots its so bomb with organic flour to make gravy out of the juices. i do all my cooking by eye but holy shit if like lamb i recommend this you need dry white wine.

i thought it was going to be over cooked but turned out fantastic

Shins, your thread inspired me to make lentil soup yesterday. I'm commuting home now, where I know there will be a delicious pot of soup waiting for me
No lamb in there btw, but that doesn't matter. I put in some dried apricots instead.

niiice! :thumbup::awesome:

I'm starting to cook more and i like making soup.

I'm going to add beans and lentils to my soup more often, i think it's a good way to use them up.

They could also be used as a meat replacement too id imagine.
