Slightest sour smell

Hi everyone
After a very successful first flush, the second flush just came to an end. When I picked the mushrooms I noticed that they have a slightly sour smell. In fact, I already noticed it 2 days ago when fanning the cakes.
The fruits were shorter and fatter than the ones I harvested before, but the caps were already half open so I decided it's time. Their stems were colored slightly blue and the caps were blue around the edge. When I opened the stems they were all blue inside.
I could not make out any visible contamination on any of the cakes. So I opened the cakes, crumbled them, and inside they were all pure white, but a stronger sour smell came from them. They were pretty light at this point, almost no moisture left.
I'm attaching some pics.

All in all I'm quite happy with my results. I'd just like some opinions for the future. Is there any tolerance at all for this slight sour smell? I threw the mushrooms away. But could they have been ok? What is it? Does it usually get worse? Is it the first sign of something bad? Can it be remedied?

blue bruising is usually related to under-hydrated mycelium.
now that i think about it the out side purple is prolly spores...

Them cakes look huge. How did you make them if you don't mind me asking? Might as well try to soak them for 24 hours and see if you can get one more flush from it.

there are definitely more flushes in those cakes , i say dunk again. and you shouldn't have thrown away the mushrooms

I used big kitchen jars, like you use to put jam in. The cakes are a little shorter than the length of my hand. I inoculated them with a spore syringe I made myself from spores I scraped from the caps of a few dried mushrooms I had.
I agree, the cakes look fine indeed 
But does the smell not concern anybody?
