You should rinse the boiled popcorn with cold water and let it drain for 30 min, then load + pressure cook. After the popcorn has been boiled + drained it should have the proper moisture content, so you will want to preserve that as much as possible... so don't leave them sitting, PC it as soon as you can.

Well I figured you could read... I mean I red that tek, and I followed it just as the TEK says. I had no problems? If you follow the tek, I don't see where any questions could pop up?

I just didn't know if it was a waste of time to boil it and then let it sit for 4 hours or if that amount of time wasn't a big deal? Just trying to get a little clarification here. Not to mention the pressure cooking bit starts out with "If you want to now.." and I assume the loss of water content mentioned might be due to sitting in the hot pressure cooker longer than necessary and losing moisture through quick evaporation, not just sitting for a few hours before I had a chance to pressure cook it.
thanks for the clarification pcube, appreciated.

No one has posted in this thread for a long while but it seems like this tek is still popular. Some people might like a short version of the tek that could be printed out, so here is a check-list version.
Note: One 2lb bag of popcorn fills 3 Quart jars.
Day 1
- Pour the desired amount of popcorn in a pot and add enough water to cover the corn by at least an inch.
- Swirl any floating kernels till they sink into the water.
- (Optional) Add 2 tablespoons powdered gypsum and stir.
- Let it soak for 24 hours.
Day 2
- If needed, add more water to the pot to maintain at least an inch of water above the kernels.
- Stir and bring to a light boil.
- Immediately turn down and simmer 45–60 min, stirring every 5-10 min to prevent burnt kernels on the bottom.
- Pour the popcorn into a strainer/colander and rinse with cold water.
- Shake the strainer/colander around a bit to rinse all the kernels. Turn off the water and keep shaking until there’s only a few drops coming out.
- Let the popcorn drain approximately an hour.
- Every 10–15 min, shake the strainer/colander to distribute the kernels so that they dry evenly.
- Load popcorn from the strainer/colander into jars so the jars are 3/4 full.
- Tighten jar lids and then loosen 1/4 turn.
- Seal jars and cover with two layers of aluminum foil, attached with a rubber band.
- Seal jars in pressure cooker and raise pressure to 15psi.
- Cook for one hour at 15psi.
- Wait at least 20 minutes for pressure cooker to cool.
- Open the valve to make sure there is no remaining pressure.
- Once pressure has subsided, open the pressure cooker and re-tighten lids.

If you were to inoculate with LC, how many mL to a quart of popcorn would be sufficient?

How long can jars sit after pressure cooking before inoculating?

Weeks, maybe more if they are truly sterile, but fresher is better, IMO

Is the 24hr of soaking absolutely necessary?
