Gonna have to go with a small catfish. If they're too big, they taste like mud, but they are damned good if they're the right size.

pompano is good, i buy it from the Asian market all the time.

It kind of reminds me of trout, but more oily, its good :smile:

Northern pike have too much flavor for me. I ate northern every day for a month while on a canoe trip. I never want to see another pike.

Walleye is very similar but tastes 'cleaner' to me.  HArder to catch though.  The wild caught walleye have much better flavor than the farm raised stuff.

I've been a vegetarian for around 3 years now. So its been a long time.

But when I did I guess good catfish and blackened tuna cooked just right was. Also just any muscle was amazing.

And that fake crab shit with old bay was amazing. Don't try to say otherwise. :lol:

Do you mean mussels? If so steamed in beer and old bay, is bomb. I'll eat a 5lb bag in one sitting.
Conch is also great from pasta sauce to cracked conch. And grouper prepared almost any way it can. Especially Grouper fingers. :thumbup:

Zumino.  Corsican  fish stew with muscles, clams, scallops, crab, shrimp, squid or octopus and fish. I make mine in a white sauce like white clam sauce. but you can add tomato to make it a red sauce. Serve with garlic bread for dipping.

I second the Walleye. That's all we fished for for 20 years. I think yellow perch taste almost the same as walleye, but their big scales wreak havoc on your fillet knife.

If you get tired of fried walleye, try slowly broiling them while regularly brushing with melted butter and lemon juice.

Maybe you should descale the yellow perch with a jet nozzle on the garden house before filleting. It works on every species I've ever filleted. Some of the local rock fish have big hard scales that will definitely fuck a good knife edge off. Lay fish flat on the table , hold by the tail and start blasting around the collar & head, working back towards the tail. The stream of water from the nozzle should be about parallel to the fish and table so you shouldn't get to soaked. Give it a try, works every time..

I always use a kitchen scrubber to de-scale fish.




I put my finger in the mouth and hold it through the gill and SCRUB!

I've only caught one sturgeon in my whole life.  They're way too rare around here to be eating.

I think the only people who can keep them are native american,  and they have to be speared through the ice or something.:shrug:

I usually just poke a stick through their mouth and roast them whole.  Peels right off.

Im partial to the beer can method (taught to me by a hitch hiker), where you cut a pint can open and  remove the top and bottom, then lay the can out flat. Cut the head off the fish and put ot on the inside portion of the can fold the can in half over the fish and toss it in the fire/oven until cooked. When you unfold the can to remove the fish the skin will stick to the can and peel right off. And there you have it.



I love all the tricks I've learned from/as a hitchhiker.

brook trout.
just gut and cut the head off. make a little tinfoil pouch stick the trout in there with some diced potatoe, zucchini, onions and a spoonful of butter. then throw the whole thing on a bed of coals. my favorite meal while camping.

i can't believe nobody said searun ctthroat trout. it's a pink meat like a pacific salmon but delicate like a rainbow. it's absolute candy fish, and fish spines look like a fern, making them edible by a vegetarian. that was my reasoning to get back into eating fish originally years ago. the mushrooms and huckleberries just were'nt keeping me healthy. i needed protein. it was either that or muscles, which turns out i'm allergic to.

i dont like pink meat in a fish, hence why i dont like salmon . being from east coast of florida we have a surplus of tasty saltwater and freshwater game fish.  i get to fish Mosquito lagoon regularly and its a true provider of  Inshore classics such as Redfish ( mmmm fucken tasty), Blackdrum, Speckled Sea Trout, Flounder, sheepshead, Tarpon....etc.

Mahi Mahi, wahoo, yellow fin, trigger fish, or sea bass.

Grilled Yellowtail fish cheeks are also pretty good (Hamachi Kama).

All freshwater trouts except for "lake trout" which is just a land locked salmon, don't like any type of salmon. Crappies, both white and black. Yellow perch. Walleye. Halibut. Flounder. Bluegill, great "pan" fish while camping. Bass, both freshwater types and sea bass. Catfish, channel and flathead. Pretty much in that order. For raw eating mostly tuna types although I've had other types of fish as sushi. Except for sushi I generally only eat what I catch myself.

I've had many other types of fish that I really did like but for the most part they aren't readily available in the stores in my area, Fairbanks Alaska.

The mackinaw or lake trout is its own species separate from land locked salmon. Land locked salmon are called kockanee here in California, which are genetically sockeyes. FYI..

All landlocked trout are salmonids, and some ocean salmonids are trout..... some are more land locked than others!

They're all pretty closely related

Kokanee and steelhead are good too, especially steelhead if you like salmon.

The best smoked fish ive ever had was an uncommon white flesh spring salmon THE BEST!

My bad. I meant to say lake trout is just freshwater char, salvelinus namaycush specifically. I was thinking of salmon while I was typing. I hate all forms of salmon, char too. I've always associated salmon with char even though they are two different species.

Bream are great! there was this really old lake i used to go fishing at with my grandparents, it had what i estimate to be 30-40 pound catfish in it. also, the Bream we caught at that lake got MAASSIVE. at least a pound or two, with a inch - 2 inch across and about 10 inches high and maybe another 10 or 12 length wise. it was beyond ridiculous.

Walleye is considered a prime fresh water eating fish by many. I'm not one of them.  I like them but they taste slightly uninteresting to me unless breaded.  I prefer their cousin the perch.  Maybe it's because they often are not the best of fighting fish.  I prefer the taste of something I had to struggle with. :lol:

I am a knapper and I dropped out of all the contracts the Chinese threw at me mostly because of concern. I even got the Klamath tribes involved and the mine is closing permanently to commercial permit holders after 2 more seasons. that's not a bad outcome if the rock hounds are still allowed to dig in the designated rock hound area which actually has the finest of the rainbow up there. sorry i'm not eating delicious Chinook anymore though. hypocrite my ass. I realize that the united states wastes the amount of heat in our industries that japan uses for everything. what companies are you supporting? does it really matter anymore?

I've caught tons of sea run cutts from the Smith River in Calif.  I never thought they were anything special.  In fact trout in general don't make it onto my top five although the majority of fish I've caught in my life have been trout. I'd take lake trout over a cutt or a steelhead anyday.

  However fishing for those cutts was some of the most fun I've ever had fishing anywhere. They live in some really spectacular places. The wilderness just above the Redwoods in California is amazingly beautiful.

  I always wanted to fly fish for them in the estuaries but never have gotten the chance. :sad:

you clearly don't know what you're talking about. we have 4 whole acres that all of us commercial miners are allowed to dig obsidian from. there are countless acres all over Oregon and California open to rockhounds only. these places have been dug to hell and some are completely played out. the obsidian mines were full of obsidian until everyone started copying my business strategy. now it isn't sustainable and I made sure the modoc and Klamath people knew about it. every single other miner hates me for that, but they are all the ones who stepped on my contracts and rights to mine what was traditionally my pit.
btw, i'm not against free range cattle in the modoc nat forest where I mine. the babies feed the mountain lions and keep them from stalking me. what I am opposed to is the use of confined animal feeding operations to fatten up the free range cattle before slaughter. large orders rather than quality. I think we could all do just fine without mcdonalds beef.

Just  because it's legal to use public lands for making money doesn't mean one has to do it.  What you do is no different than what ranchers and miners are doing all over the west. If there is ever bigger money to be made on obsidian then things will turn out the same for the environment.

How about lets leave what's left of public lands to those who respect it and want to recreate in it rather than exploit the little that is left.  Doesn't matter if it's 4 acres or 400 at this  point.  The west is pretty trashed.

Man it's fucking heartbreaking to me.  I grew up 50 some years ago when things were so much different.  It all went to hell and the little that's left is under constant threat.  I really feel for the young people whose hearts desire is to experience some clean wild nature.  It's not so easy now. I'm so glad I did as much as I did.

But hey it can still be done if you work hard for it.  :thumbup:

I want to head out to Wisconsin to fish for coasters. But we also get a summer run of brownies that are hit or miss along lake Erie shore in Pa only at the mouths of a few of the cooler  spring fed shaded creeks they run anywhere from mid June to mid August when the lake temps are 72 to sometimes 80 They are naturally reproducing fish of usually 3 to 5 lbs football shaped and beautiful and for the size they put up one hell of a fight. I've only landed 3 in my life

Very nice fish.  We have them in some of the lakes in Central Oregon. I've caught a handful while casting for browns. My biggest was 11 1/2 lb and 32 inches.  That's not huge at all as the minimum keeper size is 30 inches.

Yeah and usually you have to go very deep for them but I can catch a few in very shallow water right after ice out casting from shore or with a nightcrawler floated with a huge gob of powerbait.  With the bait 4 to 6 lb line is in order due to the crystal clear water.  You may wait 2+ hours for a bite but then you have a long fight on your hands and you won't know what it is at first often.  It could be a brown rainbow or laker or kokanee.  I've taken rainbows over 7 lbs there and browns a few lbs bigger and the kokes run over 20 inches sometimes. It's fun but cold as hell. You have to fish right before and at first light and then you have an hour or more at most after full dawn. Then it's over for the day.  Sitting there waiting in the dark at 10 degrees is a pain in the ass and why I don't often go anymore.
