Salad!

A few days ago I saw. YouTube video on the meat industry and am never eating any again unless it comes from the ocean.
Tonight I tried a new salad idea.
Sautéed the following: A head of broccoli, broken into small pieces A large shallot, sliced A box of Maitake mushrooms, broken into small pieces
After sautéed, toss with 1/2 c apple cider vinegar with four cloves garlic pressed into it. Let sit while you prep the rest:
1 cup red quinoa, cooked 1 cup lentils, cooked Two handfuls of bean sprouts A bunch of green onions, chopped A box of cherry tomatoes, cut in half A box of arugula
Cool the quinoa and the lentils, then toss everything together. Add the juice of at least five limes, and salt and pepper to your taste. This is the most nutritionally satisfying super salad I've ever made.

mmm, that sounds really great!! i could go for a salad like that right now.
and then maybe a side of bacon to balance things out.
srsly though, if i can remember, i'm totally going to make this some time. the textures and flavors really can't go wrong here, i don't think.

I made a casserole dish amount of it, and I'm still eating it for lunch today. Everything has melded together, and the different textures are still holding strong. It's delicious. Highly recommended.

I can understand your disdain for factory farmed food so common place in this country. But I have personally visited farms out in VA that practice humane and ethical animal husbandry devoid of the kinds of practice and conditions that would turn most people away from meat. If it's for religious or personal reasons I can understand, but just remember, if human beings never ate meat we would have never evolved beyond the plains of Africa, early humans needed to eat meat to support the growing brains that we take for granted today. In todays context, that may be a moot point for many, or if you don't believe in the proven science of evolution. Also I understand from a financial and availability point of view as sustainable and humanely raised meat is always more expensive, this is why Whole Foods is a multi billion dollar company. And don't be fooled, there are trawl fishing boats that also disrupt the ecology of the seas for the sake of profit, they are also genetically engineering salmon in south america and the safety of these products is still unknown. The food culture of American is still largely centered around factory farming that get huge tax payer subsidies and fast/convenience food corporations that pump additives and preservatives into almost everything we eat, it's good to see when people rediscover the joy of cooking for themselves as this is the best way to know what exactly you are putting into your body, the old saying of you are what you eat couldn't be better applied.

Unless I'm tripping, I totally forgot to put the avocado in the ingredient list. Wow. And pine nuts, and hemp seeds. First bowl of weed in a year..? And it made me realize my errors?

That is amazing.... I'm getting hungry for REAL FOOD! Healthy food! None of this easy to get qquick stuff..
Making a batch like that and eating off it for a few days is a GREAT IDEA.
