The following is my Bug Out Bag as of 1/9/13. This is my portable kit designed for 2 people to survive for a bare minimum of 72 hours in event of a disaster, emergency, or survival situation. (mainly Earthquakes that I would have to worry about) This is my "Home Kit", which I keep in a bag at home in case of emergency. It goes camping with me but otherwise stays at home. This particular kit has been a work in progress for ~2 years now. (I am building a similar kit for my girlfriend - but since mine covers most of the bases, hers will have more emergency food/water, supplies for the cats, clothes, and hygiene stuff) I also have a very similar but scaled down version of this kit that I keep in my car at all times, which covers much of the same areas (emergency water, food, way to purify water, fire, first aid, the ten essentials and more basically) but also contains different things that are more specific to things you might need in a car (tools, collapsible e-tool, portable jump starter box, air compressor, tire repair kit, etc).
I don't have my pack ultra micro-organized but I'm gonna try and break it down by category / area of the pack the gear is. Note this isn't 100% complete. There is some things I left out of this and some things that didn't make it into the pics because this kit is in the middle of being tweaked. But here is the bulk of it:
Historically, I am a bit of a nut when it comes to ultralight backpacking, but this bug out bag takes a much different approach. Weight is not as big of a factor here, although I do try and shave weight where possible, it is not the number one or two priority on my list, Where here, the focus is mainly on providing ALL the tools and resources possible that I might need to help survive an urban AND/OR rural survival situation. I also have much REDUNDANCY in this kit in that there are multiples of many different (important) items. 3 knives instead of just 1. Lots of rope. Lots of Water Purification methods. Etc etc. I haven't even bothered to weigh it but fully packed down it's gotta weigh a good 50-60 lbs, this pack carries it extremely well though, it feels like nothing.
This is the pack, Sandpiper of California - Long Range Bugout Backpack. Thing holds a ridiculous amount of gear.. 4,200 cubic inches in 'compressed' mode.. 5,600 'expanded' Here it is completely packed with everything you see below in 'compressed' mode. Still tons of space leftover.

"Food" Group - This is what I usually keep in the bag, enough emergency food/water to last 72 hours or so. There is a bunch more "survival food" I keep at home and can supplement this if needed.
 - Mountain House Freeze Dried Meals - RecoverORS electrolyte mix x 8 (really amazing stuff - like 6x more electrolytes than gatorade and more effective than pedialyte as well) - 400 calorie emergency survival bars x3 - Mainstay Emergency Rations (3,600 calories) - Emergency Water pouches 4oz x 8 (all the food and water has a minimum 5 year shelf life (aside from electrolytes), mountain house up to 25 years)

"First Aid Kit" - This is my "Level 2" First Aid kit. Designed to be very portable, but with a deep level of medical capabilities even in a remote environment. I keep a very similar first aid kit in my car. I based this kit almost exactly off of USNERDOC'S level 2 FAK.

No guns/ammo?
A small .22LR pistol is great for hunting small game like grouse and rabbits and wouldn't take up much space.

The women is vehemently opposed to guns  I'm probably going to end up getting one anyway. I'd like something for home defense moreso than hunting game, although it wouldn't hurt. That slingshot is pretty cool for small game.

Bummer. When you are starving because you couldn't get anything with the slingshot, you know who to blame. 
 It would make a good addition to your bag if you manage to do some convincing.
Edit: Btw, other than having no guns, that is a pretty sexy setup you have going.

Thanks. I do plan on adding a firearm eventually. It could easily be incorporated into my system I need to do my research there because I'm a total noob in the gun department even though I've been backpacking since forever.

It all depends on what functionality you want your firearm to serve. For home defense, I would recommend a large caliber double action revolver (.357 mag ftw) or a shotgun.
For hunting, it depends on what you are hunting. A .22LR is a great choice for small game. (people have even killed deer with them, though it is illegal in most places)
Anything larger than small game is going to require a hunting rifle though.

Few things come to mind.. relatively lightweight, lots of stopping power, high capacity.. reliable above all else.. I'd definitely want to start with a handgun.

Relatively lightweight and high capacity rule out a bunch of revolvers. Unfortunately, revolvers are the most reliable handgun you can find.
I've heard good things about Glocks, but have no first hand experience to back that up. You might try looking into .45 ACP for stopping power.
I'm not really an expert. I just really love guns.

I'd add this. It could save your life, It's stainless steel and has a floatation case. With 1 or 200 rds of ammo you'd have a real chance if that 72 hours turned into 72 days. http://www.marlinfirearms.com/firearms/selfloading/70pss.asp

I'd skip the handgun even if lighter. They are very hard to shoot with any accuracy without tons of practice. A rifle by comparison is very easy.

I actually have more practice with a handgun than anything else, that's what I think I would be most comfortable with. But you're right of course. I'll just get both and pick and choose or have both.

Well get a handgun with at least a 30 inch barrel and you're good to go. 
Even if you're a good shot it would be hard to hit something with a hand gun in a vital area at 50 yds. Unless you're an amazing shot. Maybe you are for all I know.

Copy away. I learned from what I would consider one of the best survivalists. I'd be happy if this post helped inspire just one person to put together a kit or rethink theirs. Experience in backpacking and outdoors over the years inspired it... but a few years ago I decided I needed a serious Bug Out Bag (aside from my regular 'camping' gear) for if the shit hits the fan and started throwing this together. I got it pretty completed, but I'm constantly tweaking it, adding stuff, taking stuff out... etc. Never fully satisfied, I'm an OCD perfectionist like that when it comes to gear though. Next step is definitely a good reliable weapon. I gotta do my research there, like I do with everything. Definitely eyeing that 70PSS or something similar though. Want something really solid

I did a lot of research and came up with the Marlin Papoose. (years ago though so there may be something else out there now) Stainless steel barrel so won't rust. Brakes down and goes together in seconds. Has a small floatation case so won't sink in the case, has great sights and is very accurate for a break down survival gun. Relatively dependable. You can mount a scope on it. Finally 22 ammo is very light so you can carry a lot if you have to.(big consideration) It weighs 3.75lb. so it's not light like an AR-7 but I have one of those and I wouldn't consider it accurate past 40 yds This all makes it an excellent extended survival weapon imo.
