Sourdough Bread

Does anyone else make it?

I have just started to get into sourdough. I got a starter going about 2 weeks ago, and I've just made my first loaf!! Not a bad flavour. Didn't rise as much or as fast as I'd like, but I chalk that up to a beginner using a beginning starter :P

I make it! Mine rises pretty slowly but I just let it sit somewhere cold overnight and bake in the morning and it's nice and fluffy by then. Longer rise time gives more sour flavor, though more sugars get digested so the loaf browns less.

It seems really resilient too. I've forgotten it in the fridge for about two months and when I finally remembered to feed it it smelled like acetone (internet informs me the smell is probably ethyl acetate) but a few days later I had a nice loaf.

I did sourdough for a few weeks last year, but I don't have the patience to go through with it. Plus, we have a baker in town that specializes in sourdough and there's simply no way to match their breads. Those guys are really awesome.
