yeah when you dunk you cold shock it too by putting it into a jars/container and using something to hold the cake down with then put it in your fridge for 24-48 hours and never go past 48 hours because you will kill the mycelium

Cold shocking is really not necessary once the fruiting cycle has been initiated and has begun. I would think that it could actually have a "stunting" effect on top of the damage from dunking, resulting in a slower recovery time. Proper fruiting conditions will yield quick subsequent pins after a flush. But, it could still very well work for some strains, and dunking has pretty much proven to work, almost necessary with cakes. With a casing, both dunking and cold shocking will introduce delay, when just watering the casing layer will do.
And as Psilocybin_monkey said, you can cold shock and dunk at the same time. This may have a hidden advantage, sometimes when I have dunked older casings to re-hydrate them, over a period of time (12-24 hours) the water will start to have a fermenting smell. This is not as pronounced as when dunked in the cold of the fridge. If it is due to micro-organisms, then the colder climate could slow their reproduction. I do this now in hopes it will keep bacteria at bay, and keep the mycelium healthier with fewer competitors. It also helps to dunk in a solution of peroxide and water, about .5% is effective.

But if you dotn fridge it during the dunking, the cake may rot. So might as well. From my experience you arent supposed to dunk past 24 hrs, or else you would have a dead cake.
