Popcorn Discoloration

I recently prepared 16 1/2 pint jars worth of popcorn and innoculated them with a liquid mycelium culture (honey tek) on July the 17th, 5 days ago. I injected roughly 2-3 cc's of culture into each jar and shook vigorously. I am using a singly polyfill-stuffed hole for ventilation and have shaken three times now. They have been incubating at around 85 degrees.

About the third day of incubation, I noticed some of the popcorn kernels turning slightly brown, especially in the areas where some kernels had split from the heating process. With time, the brown was noticed on more kernels and has become increasingly dark in color. Now, mycelium is finally detectable in the jars, but I am worried about the brown color on the majority of the kernels. It seems as though mycelium is starting to grow on the browning kernels, but for all I know it could be the early stages of cobweb. The kernels were beginning to take hold of one another today as noticed when shaking, I assume as the mycelium or contamination built its matrix of webbing. The white growth is indistinguishable whether it is mycelium or another mold. Have any of you experienced a similar discoloration?

Popcorn discolors when it gets colonized by mycelium. It will also get discolored when contaminated but there are other indicators as well.

If you see mycelium, dont worry unless it stops growing.

I use yellow popcorn and it turns red. Dont shake your jars so much as it takes time for the mycelium to recover. Wait and see what it is, dont throw out untill you know

i know this guy down the street that had the same problem with 3 jars of popcorn, it was carmel colored or light brown. he thinks its from too much water but not positive.

Its hard to get too much water in popcorn. Did you rinse before straining?

I let the popcorn sit covered w/water for 24 hrs. Simmered at low boil for about an hour, then PC'd jars 2/3 full for 1 hour. Haven't heard of rinsing.

Aftyer you boil you rinse with tap water. It stops the grain from cooking any further and also washes off the startch. One guy did 18 jars without rinsing and they all failed. Did 10 rinsing and all worked. You have too much starch in your jar, Shit happens

This step is not in the popcorn tek anywhere that I saw. My friends jars with no rinse are doing fine. The step it looks like may have been missed here is draining the corn after boiling. Isn't the rinsing for cracked corn more than popcorn?

Not as far as I know. I read that you have to rinse, I dont know why its not in the tek. Ive rinsed myne and have gotten full colinazation in 10 days from innoc. I dont see how it can hurt

Update:
The discoloration seems to have had no ill effects on colonization. All jars are at about 60% on day 7.
