75 min in PC. Worried PC boiled dry. What to do

Well it's maintaining pressure but the hissing has significantly slowed.  I certainly added sufficient enough water as I have in past  pc's but I've never heard it settle like this.  It's letting out a lil hissage every 15 seconds or so for maybe 2 seconds at a time.  Ny idea what's up?  Can I shut down, let depressurization, add water, and PC for the remaining 15 mins or it don't work like that?

That's way too much steam venting so you should reduce the stove setting.  The weight should only jiggle once a minute or less.  In fact, with most PCs, they will start to vent a small amount of steam at around 14 psi, and not jiggle and release a lot until 15.  Just run it at 14 psi and 1" of water will last for several hours.

Might I have too much water then?  As even when I'm dead pinned on 15 or even down to 14 it still jiggles and vents steam at least every 10 seconds or so.

Too much heat maybe. The grain continues to gain heat for at least the first half of the cook so with a constant heat source the temp will tend to slowly increase. I try to maintain between 14-15 knowing that the last 20 minutes will be solid. You can measure the water going in and coming out to determine how much is being lost.

Then reduce heat and run it at 13.5 psi.  The temperature difference is negligible.  Just be sure to vent steam for five to ten minutes before putting the weight on at the start of the cycle.

If it's an old unit, the nozzle and weight assembly might be worn which causes it to rattle at a lower pressure.  You might want to replace them both.

I got it down on this run now.  I never went above 15 psi before.  Now I'm pinning at 14.5 from the get go.  Would the fact that I might of had flame high before and steam running out constant cause my grains to have burned?  How would I be able to tell?

Just realizing how much propane I've proly wasted.  :nonono:  I use a camp chef stove.  This thing here. 
This thing pumps out some heat.  30'000 btus at full blast.  my model has a 60'000 btu high output burner on one of the, as well but i dont use that one for pc'ing.  I've got the flame down a lot now and the sweet quiet in comparison is nice.  Lol.  Hopefully I didn't burn my grains.  Didn't have it full blast but I had it up there.  Ill see how this batch looks in comparison.  But my first two runs colonized, but kind of slow.  I wonder if that had anything to do with it.  O well, ya live, ya learn.  Here's to saving a ton of gas though!  :cheers:  although, even since learning this I've been through 6 runs and still on same tank.  I'm sure doing it like this will double the life of the tank at least.

It didn't burn the grains but if there's excessive rattling of the weight, there's excess loss of water from the PC and from the grains, so they might have dried out some.

Sounds like you got it nailed now.  The important thing is to get all the air out by leaving the weight off for a few minutes until it's pure steam blowing out, and then place the weight on to build pressure.

Thanks RR.  I think that was the source of the problem.  I waited 10 mins from the first few spurts of steam n not from when it was steady stream so maybe a min or so after pure steam I put weight on.  This time I waited, until pure steam n by time I put on weight I could hear the vent at a nice steady climax of a hiss/whistle after inclining up to that steady sound.  It seems before hand any fluctuation in the heat made the pressure inside the machine very sensitive.  If I raised or lowered the littlest bit it would cause it to really rise or really drop.  At least in comparison to now.  It didn't seem before in my other runs I could possibly maintain this amount of calm steady pressure at this level of flame.  Any chance I did any damage to my cooker from those runs?  I mean, granted its workin like a real beaute now, but no chance I warped it or anything?

No, it's fine.  It's an AA.  You probably didn't have enough of the air out before, so you were compressing air instead of steam.  That's why it was so sensitive then, but stable now.

Don't forget to clean and lube the mating surfaces with Vaseline before every use.

I gather to get all the air o it leaving it being straight condensed steam in it throughout the process.  Whatever the reason it clearly makes a big difference.

To remove all the air from the unit so it's filled with nothing but steam, for even sterilization.

And so you're not compressing air instead of steam, like RR said.

Would the fact that I didn't properly do this before lead to not reaching full sterilization?  I'm guessing not as my first two batches came out ok.  But a few jars have yet to fully colonize.  And all in all they were slow to colonize at that.
