I think overnight on the counter would be fine. Some spores will germinate which just makes them easier to kill. I've never needed to refrigerate, but in theory that would give you a couple days more at least.

How do your dry your grains then if you don't simmer and steam dry?

Grain that hasn't been boiled or simmered doesn't need to dry.

I strain it for like 20-25 minutes and load the jars while the WBS is still a little wet on the outside, PC for 140 minute@15psi, plus the 20-25min of depressurization.

I take them out right after the pressure drops, shaking each jar a few times as they cool. Once cooled they roll around like litle dry BBs.

This is how I do mine, individual results may vary.

ya most of the time the moisture gets uneven within the jars after PC'ing. for me it is obvious that some parts of the jar will look alittle dry which is why i have shaked every time to distribute the moisture right away...

if yoru moisture content is correct you dont have to , acording to rr, i personally cant get wbs to turn out where i dont have to shake it after pc, rye berries i can np, but wbs i always give it a good shake or two, nin puts a cunt hair of verm in each jar, you could avoid it if you did this

You need to soak them for close to a day or the endospores won't germinate and you can't kill them if they don't.

Sterilized is not sterilized.  PCing for 90 minutes doesn't completely sterilize.  It just kills enough to give your myc a running start in the race against contams.

I've had great success with 4-6 hour soaks. No need for 24 if you don't have the time.

From what I read pressure cooking can damage or kill the endospores.  I have seen teks where people do not hydrate the grain at all prior to the pressure cooking.  They put water and grain in the jar and just cook it up.  I have tried it several times.  Contamination wasn't really an issue but I am not a fan.  It sticks together too much and is tough to break apart even with a little gypsum added to each jar.  There are too many burst kernels for my liking.  So I started experimenting to find the best results for my rye berries.  In my experience a 4 hour soak yielded the best results in terms of hydration and burst kernels.  Longer soaks had no better results.  I once did a 48 hour soak and germinated the rye berries themselves.  Well some of them anyway.  Anything shorter than that and I started to see kernels bursting during the boil or during the pressure cooking.  For me one hour warm soak yields acceptable levels of burst kernels in the final product.  I can not recall the last time I had any bacterial contamination.


Bottom line.  You do not need a 24 hour soak.  You just need to fully hydrate the kernels and pressure cook them.  Btw I only pressure cook at 15 PSI for 1.5 hours.  This works for me.  Do what works best for you.  I am sure with time and trial you will come to find what that means for you.

In theory you are certainly right.  In my alternate reality (where the absolutely quickest way to a run had to be tried) no soak is required.

I hydrate corn (both popcorn and crappy cheap cow feed corn, filled with obvious evil growth) with a slow boil for about 2 hours.  I shake/towel dry it and PC it (for 120 minutes) or store it in the fridge for up to a couple of weeks and then PC it.

About 90 quart jars so far with this process (40 jars is my inventory build up and then noc up), not 1 contam. I used to soak rye and then use it. No more.
