Just how wet do you want the WBS?

Using doc34's wbs tek, just got done with the simmer, now letting the wbs strain, I'm just wondering just how "wet" I want it, because I have read numerous differing opinions on how long they let the wbs sit to dry out, the tek states 20 mins, but I have read some users waiting 2 hours, so my question isn't really about the specific time, because I realize that varies from region to region, but how DAMP do I want the wbs to be before I load it in the jars?

If you place a small pile of your prepared WBS on a single sheet of toilet paper, there will be NO wet spot. This is perfect.
You want ALL the moisture on the INSIDE of the seed, NONE on the outside. When proper, they will look dry.

The moisture is supposed to be inside the seeds, and dry to the touch

You should be shaking the steam off while its in the strainer/colander. It dries so much faster.

the TP test is a good indicator.
I have never tried that tek I always soak>simmer>steam dry my wbs

prior to loading make shure you give a good stir because bottom grains tend to stay wet longer obviously.

when I load my jars I use a spoon ans scoop each scoop in, if i I get grains stick to my spoon ill stir it up and allow to dry a bit more.

in general its better ti have grains a bit on the dry side than wet if you myst choose one.

eventually it becomes second nature and you'll get perfect grain each time.

Well its been about 30 minutes and its still quite wet to touch, so I just put out a bunch of paper towels and spread it as good as I could across the paper towels, hope this is a good idea. I have about 6 Quarts worth of wbs

Yes if it's still to wet spread it out and let it dry, or use a fan. You cannot load them and PC them with excess moisture. Do the TP test every 10 mins while they are drying, until they don't leave a wet spot. Next time as soon as you are done simmering/boiling them dump directly into the strainer and shake them around, since they are still hot all the excess moisture steams right off and you don't have to do all this.

You don't want it wet at all, as already said.  It should only be damp.

Alright I.opted to put a tiny fan on them spread out, just don't want to dry so much I screw something up

I sometimes let it dry for up to an hour...
Never had any problems with it being too dry.
I soak for approx. 24 hours and then simmer for 5-10 min...
While they are still hot I toss them, they should be steamy, if they need to be heated again *carefully* microwave them, I do 1 min at a time, depending on the quantity of WBS.

been drying now for about two hours, after one hour they were still quite wet so I put the fan on them about 45  ago.. Almost there it aeems, externally

I find it best to spread them out over layered paper towels, immediately after
straining the water off from the boil. Usually no more then an inch in height evenly
distributed. Moving them around with a spoon every 5 minutes. There almost always
dry in 15 minutes.

there are some places that are humid as hell.  Even after soaking and simmering, I've left my wbs in open air for hours and hours, and theyre still wet.  the smaller seeds like sorghum and millet are the worst.

microwave for a minute helps a little, but your best bet is to put a whole bunch in a giant glass bowl and use a hair dryer to dry it up while tossing it up carefully with a spatula.  this has solved all my freakn problems with wbs. 

BTW, after PC, your wbs will still be a bit wet from the condensation no matter what you do.  but as RR has said, it's normal.  shake it after it's warm to the touch, then shake again when cool.  then shake one more time the day after.  it isn't so much like wheat or rye that can expand and soak up some of the extra moisture immediately after the condensation sets in.
