Dried but rehydrated. Why?

Hi everyone,
I have dried some mushrooms 1 month ago. I just checked the zip bag. And found out that. The mushrooms are flexible and they look quite hydrated again.There is some very small white fuzzy stuff at some of them. And others look fine but hydrated. Not sure what to do. Should I put them back in to the desiccant chamber or to the fan? . And how should I keep them? Are they still safe to eat? They look darker then their original look too. Hope someone can help. Thanks

They were probably never cracker dry to begin with...if there's mold growing on just one of them I would throw out that whole batch...that shit can get you really sick.
Next time make sure they are cracker dry and store them better.

Thank you for the advice.
What do you mean by storing better? Could you give some advice on this. And How can I make sure that they are completely cracker dry? They looked pretty dried out to me.

If you can turn it into powder with your hands its cracker dry...
If it snaps in half and brakes into peices its cracker dry...
If the mushroom reacts to pressure like a cracker would, its cracker dry...
If its flexible/squishy at all then its not.
I dehydrate mine for 12hrs with heat and then store in baggies with desiccant packs and then in sealed jars, but anything air tight will work, just add some desiccant.

Dehydrator works best, what I do is let it run a very long time. some take longer than others, according to density.
After all are crunchy and snap like potato chips, then they are ready to store. put in ziplock bag with desiccant packet. squeeze the bag/ roll air out as you zip it up.
desiccant packet will absorb any air left inside, keeping them crackery. If also wanted, you could put that zip bag into a jar [in case the bag had a leak, or really worried about keeping them dry in humid environment. Could also put desiccants in the jar; may be overkill though. hah!]

Thank you very much. They weren't really cracker dry I believe in that case, looked pretty dried but probably not completely like a cracker.
Just a couple more questions if you don't mind and thanks again.
Can I use calcium chloride as a desiccant that goes in to ziplock bags. In a emptied tea bag? I cant find that silica gel bags. Would this be safe?
Are you using a dehydrator? where can I find a dehydrator?
I am using fanning and desiccant chamber(Calcium chloride). I believe my mistake was storing without a desiccant.
I have another batch that I dried recently. They look ok no mold or anything. But they will be ruined as well if I am not more careful.

Yes, I got mine brand new on ebay for $40 with FREE SHIPPING.
You can prolly find one for cheap if you look at thrift stores tho.

Contrary to popular belief, zip lock bags are not air tight. They're made to breath. Unless you're putting them in a freezer or an air tight container (such as a mason jar), don't rely on bags.
An easy way to make desiccant packets is to use tyvek and an impulse sealer or a stapler.
