Yuzu is one of my favorite flavors, so delightfully citrusy. Also love scallops, raw or otherwise. The nut milk thing sounds unique, never had that sort of pairing, especially with the yuzu. Creamy and citrusy is an uncommon combination.
Some small-side diver scallops were on sale the other day so I bought them and blasted 'em out as a snack.

Those look gorgeous!! Definitely try the seafood/nut milk/citrus combo if you ever get a chance. I’m a huge fan and always is unexpected. We had a serving of warm caviar in fresh almond milk with walnut oil and lump crab as well that was just bonkers.

Not dinner, but breakfast: I had a pan-friend egg, some cereals, and lots of veggies from our backyard. Totally organic, very healthy.

Tonight I did an instant pot ground beef stroganoff variant in which I tossed in my (failed indoor) experimental backyard grow dehydrated oysters, and it came out amazeballs. Not necessarily because of my own mushy addition (they add texture). Its just delish.

Nice!! Looks very similar to what my wife whipped up for dinner last night, semi-homemade style, using Costco's spinach and cheese raviolis, chicken breast, Trader Joe's tomato pasta sauce, cherry tomatoes, kale, parmesan and buffalo mozz cheeses. Finished under the broiler for that golden gooey cheesy crust.

Tonight's fanfare will consist of -
A simple chicken salad consisting of mayo, some green onions, chopped pickles, and a little siracha. (plus S+P to taste).
HOWEVER, I plan to put it on sliced brioche bread with a slice of havarti cheese, before I dip it in an egg wash and cover it in panko breading and pan fry it to a golden brown.
I showed the wife the recipe and she got super excited. I can't wait to try it!

My wife actually got mad at me for how amazing they came out.
Chicken salad is chicken salad which is delish on its own.
Taking the sandwich to the next level with egg washed/panko frying made it stupid. Stupid delicious.
10/10 will do again.

My wife made some pan con salchicha with some elote this evening. When we first started dating I was very skeptical about elote, something about putting mayo on corn sounded off to me. Oh boy was I wrong though, it has turned into one of my favorite sides for dinner.
