Curry balsamic mushroom and onions on ginger hoisen turkey burgers with havartti cheese spinach yellow beefsteak tomato, sirachia, ciabatta bun. Edamame abs snap pea salad.

Last nights meal ;
Sousvide and seared pork coppa with; white bean cassoulet Charred and raw red leaf lettuce Roasted onion Apple cider and brown sugar glazed apples Pork belly reduction Lime and coriander yogurt. And a poached egg.
The pork belly reduction was really the star of the show. It's a broth I made from scraps I saved at work : I used roasted pork belly , turnip, burnt onion, roasted garlic, oyster and beech mushroom scrap, parlsley thyme and some peppercorns . Mad a nice clear broth and reduced it as far as it would go and hit it with a knob of butter. The coppa was fire too but besides searing it I didn't prep this particular batch.
I made the most out of what little was in my fridge. luckily my chef let me bring home some Pork coppa scrap.
I had an already sliced -half a week old onion, 1/3 of a two day old already sliced apple, some yogurt, eggs, 8 day old red leaf lettuce (the center was pristine) ,butter and seasonings.

thanks, lately I've been getting into dishes that can be great all mixed together but also be great if single elements are eaten by them themselves .

Timing is an issue. We do similar plating at work and it's fast paced , but this particular pick up would make grown men/women cry . Between searing both sides of each piece of coppa, the poached egg and filling each lettuce cup full of broth -without spilling any. I plated pretty fast but was sweating.
What part of the world are you in? I'm in Portland so I'm lucky in he fact that people's palettes are pretty broad.i can get away with burning, fermenting all kinds of weird shit.
