God damn that looks good. I'm not a fan of mushrooms, but I would totally eat that because you brought it all together perfectly.:homerdrool:

We're having black bean burritos for dinner.

the mushrooms were so amazing.  i made a lot so i was just eating them by the spoonful; have some left over to make something else with as well--probably an omelette.

Well it ain't dinner, but a farm breakfast with crispy fresh salad greens, plum, avocado, a sunny side up egg and balsamic vinaigrette will have to do.

Last night i made some scaled down arroz con pollo and stuffed that into some bell peppers. holy shit.

and this is from a little while ago, i made a garlic/lemon sauce. Those are black cherry tomatoes from my lil garden. YUM.

for dessert i had cactus pear, kiwi and watermelon drizzled with condensed milk and dopped with some pineapple mint also from my garden.

Spelt pasta with a pureed white bean and artichoke sauce, spinach and an array of mushrooms. Topped off with nutritional yeast and sunflower seeds toasted in garlic oil.

Nom nom.

Two months into a vegan diet and already getting more and more creative. It's just like art school, as soon as they give you some restrictions, the creative juices get flowing.
