Thee nights running,
the dressing is olive oil, white vinegar, little white balsamic vinegar, minced garlic, oregano, parsley, salt, pepper and crumbled feta cheese. the diced bits are peeled seeded cucumbers, peeled tomatoes, green pepper, yellow pepper, onion, mozzarella with sliced black olive, salad shrimp and drained shredded canned albacore.
This is more of dessert tonight, I had this after a burger, cheddar, tomato, romaine and onions and mayo.

Sushi grade cuts get flash frozen (-35F) to eliminate risks sometimes you'll find it in the fish market still half frozen-- there's nothing wrong with that, the flash freeze kills off any potential parasites.

a couple times, never anything all fancy like the last two pictured. just basic stuff: spicy tuna/shrimp tempura/avocado/crab/cucumber/etc.
i had most of the tools, since i've moved i have no idea where my mats or my hangiri oke are. i know i don't have them here, which is a bummer. if i remember correctly, i'm pretty sure i left my hangiri oke at a friend of my sister's place when we went and did sushi over there. sucks because they are kinda pricey, and i doubt i'll ever see that one again
sushimi and sushi are easiest, though. rolls take a little while to get down as far as making them presentable goes; there is a certain way to layer things to get it to look all pretty that takes practice.
so i'd say difficulty level is easy to moderate. it's definitely fun! you can make rolls, chill with friends, and drink beer at your leisure.
we have a decent fish market in town. their higher grade stuff is really lovely, but i can never afford it. i'll still buy sushi grade, but low-end. it's fine for at home as far as i'm concerned.
now i want sushi again. i should upload all my sushi pics.

FYI--- about 6months ago I went through all this on my own with no guidance whatesoever and I found THIS WEBSITE: http://makemysushi.com/
and while it's not quite as cool as the shroomery, it is VERY educational and helpful for amateur sushi enthusiasts... with pull down menus of instructions and nomenclature and lots of educational even animated information for the layperson interested in producing quality sushi meals at home. LOVE IT!!
Tonight I'm makin some carnitas tacos--- traditional style, because traditional style is gluten free. Soft corn tortillas, a few pintos, some cheese, some cilantro and a lil hot sauce--- that's it.... yum!
I mixed a shoulder butt steak with a whole tube of chorizo and cooking it slowly down in red wine and water till it pulls... gonna be
BTW--- if you didnt know, pork butt is actually the butt of the shoulder muscle, so a "blade steak" is the steak cut from the pork butt. just FYI-- there's no "butt" in pork butt

Grilled chicken breasts slathered with bbq sauce and rice with mixed greens.
The greens: collards, Turnip greens, and dinosaur kale wilted till dark green in butter with a bunch of garlic, habaneros, and some natural soy sauce. With a tall glass of green tea ginger ale (yes, that's ginger ale made with green tea- it's awesome).

Zucchini&yellow squash casserole. Veggie "chicken" for me. Broiled Florida lobster with garlic butter (caught last night during mini-season) for the husband. I also pan-fried a triggerfish fillet that was caught last night in case he didn't care for the lobster. He said the triggerfish was reminiscent of hogfish. He did enjoy the lobster, though. Herb biscuits.
