Today I made kimchi from scratch....now I must wait for it to mature, 1-5 days at room temp and then another 1-2 weeks in the fridge for best results.

I used this recipe

The reason I decided to try this is that kimchi in the store is sorta costly--- like $5 for a little 20oz jar.  I love to make kimchi scrambled eggs and kimchi fried rice and sometimes I just eat it plain or maybe heated a little as a bed for a piece of fish like salmon or cod or escolar. 

so I figured I'd save a little $$ by rolling my own-- so to speak.

I doubled the above recipe so-- two heads of napa cabbage, a pound of daikon, plus I added 2 whole carrots cut julliene along with the radish.  All the ingredients probably cost about $10-12 and I ended up with just a hair over a half gallon of kimchi once it was in the jar.

I cant BELIEVE ALL THOSE VEGGIES fit in one half gallon jar!!!  it's crazy!!


so now I understand better why a 20oz jar costs $5----  it's got about a half a head of cabbage 4oz of daikon radish, a couple scallions, some mustard greens, and a splash of oyster sauce along with all the chilli paste inside just one jar.

Okay so here's a pic of the kimchi:



I made a 2nd batch yesterday so the photo is 3 half-gallon size jars.

since this is an exercise in lactic fermentation I chose to buy a jar from the store and mix it in as a starter to get things rockin and it worked great--- fermentation is active less than 12hrs after putting in the jar.

the first batch was seasoned with oyster sauce and white Oregon truffles

I left the truffles out of the 2nd batch but added mustard greens and sweet onion to the mix.

edit:  I just tasted the one with the white truffle in it and all I can say is "JUMPIN JESUS ON A POGO STICK" this stuff is sooooo good

homemade pizza excellence! (not for the faint of flavor!)



left image: the unfinished 'middle' of the pizza. below what you can see is bbq sauce instead of tomato sauce covered with mozzarella, smoked provolone, and parmesan cheese, with pepperoni on top of that. then a little more cheese topped with jalapeno, cayenne, and habanero peppers, red onions, and garlic.
right image: covered the middle layer with mozzarella, more jalapeno, garlic, and pepperoni on top....plus some anchovies for good measure. then baked to perfection!

Asian-style stir fry with whole wheat linguini (cheaper & healthier than rice or lo mein noodles), onions, zucchini, baby bok choy, & homemade peanut sauce with marinated chicken for the husband and marinated tofu for me.

The marinade was an orange-ginger vinaigrette with orange marmalde, ginger, soy sauce, rice wine vinegar, and sesame oil.

Tomorrrow (Wednesday) is my birthday, so I insist on supper OUT.  :sun:

I have more baby bok choy and am thinking about a slaw, maybe for Asian-style tacos.  Any suggestions?

from a couple weeks ago. this place is amazing, but way too pricey to eat at on any kind of regular basis. but i was going to a comedy show with my bestie right around the corner, and grabbed this before the show started.





this place is much more affordable, but not as good (still good, though. best sushi for the price i've ever found, and better than quite a few at full price). my go-to place, for sure.
