Just went shopping to make tagliatelle with chicken & brocolli... Will be preparing in two hours, i'll take pictures :Awemazing:

I prefer it with salmon, scampi (large shrimp?) and a light curry sauce though (the pasta) but i'm in the mood for some chicken :smile:

& Slothie you can't tell me your out of your delicious ramen soup already!! although i'd perfectly understand, om nom nom :lol:

i'm a little sad you marinated those rib-eyes. i can never bring myself to marinate rib-eyes, i think their flavor should be enjoyed in it's most natural state with some coarse ground black pepper and salt but that's it, and that should be all you need for a good rib-eye.


i'd still eat the shit out of it.

I actually disagree. I think rib-eye is the best with some au jus, at least that is how Lawry's does it, and I like the way they do steak better than any other steakhouse. Better than Morton's, better than Palm's, better than Ruth Chris IMHO. And even Ruth Chris does a filet mignon with a mushroom cabernet sauce.

Filet mignon traditionally yes, all it needs is salt and pepper, but with rib-eye and prime rib you are allowed to experiment a little.

while i'm fine with au jus or a sauce put on after cooking, i don't think rib-eyes should ever be marinated; they already has so much flavor and tenderness of their own because of the marbling, why mask it with marinade?

either way it'll be good. but i prefer my rib-eyes to stay rib-eyes rather than have their flavor overpowered by marinade.

yes, fukkin costco.  they actually have prime cuts! 

and for you newbs---  beef grading is as follows:  ungraded, select, choice, prime, kobe

any rib-eye you find at the store that is less than $12/lb is probably select grade or ungraded beef.  There's nothing wrong with the lower grade beef but you should sort through them and find the one with the best marbled fat... that's where its at. 

ungraded beef has a a greater degree of variation throughout the cut-- meaning at one end of the rib roast you might have something that resembles "prime" and at the other end it might be too lean to be considered select grade...  but for the price, it cant be beat and if you dig through the meat case at the store you can actually find a rib-eye that passes for "choice" or even "prime"

Actually the Beef grading process if 100% voluntary and is only done to establish a price point.

The beef grades are from top to bottom; Prime, Choice, Select, Standard, Commercial, Utility, Cutter, Canner.

Kobe is not a grade of beef and ungraded means just like it sounds.  It's ungraded.  While it may seem that a loin looses quality from the rib end to the loin end, that's just the nature of the meat.  In fact the grading is done from the leaner side between the 12th and 13th rib and the grader never sees the marbling in the ribeye.


While I love a good ribeye, a good chuck eye is almost just as good.  The Chuck Eye is the part on top of the ribeye thats most tender.  Just a few inches up into the shoulder and off the loin that tender part gets bigger and turns into a steak all of its own.
Grilled is a MUST for a ribeye and I like both the butter and dry kind.  I do mine with A1.

:thumbup:  I worked in distribution and we didn't handle anything but prime/choice/select and a few ungraded products.  I mentioned kobe because it sorta stands alone--- can't really be compared to any other product.  Snake River Farms kobe is pretty good :manofapproval:

Last night: "Asian-style" marinated pork/veggie "meat" with sautéed zucchini in peanut sauce and tomato&cucumber salad in ginger soy vinaigrette.

Tonight: ROASTED GOLDEN BEETS on fresh-picked lettuces and watercress with avocado, goat cheese, and candied walnuts with orange-tarragon vinaigrette.

I'm just happy to get back into the kitchen after working like a bitch every night.

And I really love roasted beets.
