We're in the midst of a cold snap (57°!), so we threw together veggie chili in the Crock Pot this morning and ate that with homemade cornbread tonight.

Been eating out this weekend--- nachos, Lamb-Burger, Wild boar meatballs, curried mussels, lots and lots of cider and some scotch.

Sort of, but it's different from shabu shabu. Shabu shabu you use water, sukiyaki you use sukiyaki sauce in the pot, and dip it in a raw egg as you eat.
My second suggestion to you (and it will be easier to make than sukiyaki since you already have chicken stock going on), is to make udon. Just add some tsuyu sauce to your base (or use soy sauce, mirin, and dashi), then add some green onion, shrimp, tofu, whatever else you like.
I make these suggestions, because I think that shiitake is best when you boil it or steam it in some kind of liquid, as opposed to grilling or baking. Really soaks up the flavors, that mushroom.

Like I said-- I was tired of cooking, we been eating out this weekend.
but I did make this frittata for breakfast with caramelized shallot and shiitakes steamed in michiu wine then tossed with bacon, thai basil and sambal olek, topped with dry aged jack cheese:

I took Crystal's advice and made some ramen from scratch with the shiitakes, shallot, chix stock, carrot slices, tamari, splash of rice wine and another of rice vinegar, chilli oil, egg, tofu, chicken, rice noodle, and thai basil

I just popped a pork butt into the oven at 200F it wont be done for about 8hrs. Tomorrow it's gonna be carnitas

Stove top pot roast!! I'm quite proud of it. This is only my third time making it. Cooked with fresh cilantro, rosemary and almost a whole head of garlic. And some beef bouillon.
Beef roast, little red potatoes, purple onions, baby carrots, and broccoli.

Panda, your dinner looks delectable. I would so sit up and beg for a bite :-)
I made a huge pork shoulder butt for carnitas, it took waaaaaaaaay longer than I though tit would so now it's liek zerodarkthirty and I'm wating for it to cool down enough I can pull it apart 

I think a lot of people dont know if you want pulled pork, the roast has to make it up to 200 degrees otherwise it will stay tough not tender... 190-200 and it will be so tender it will fall apart.
I put on disposable rubber exam gloves and pull the meat by hand but it has to cool down otherwise it is kinda painful to handle when it's still hot.
I put this thang in the oven at noon---- so yea it went for 12-13hrs at around 225F

Thanks Trav :3 It was quite delicious. Also, when you wait until the meat has cooled, it keeps in all the juice! When you cut at it right away, the juices and flavor escape. So thats another reason other than getting burned to wait.
