Venison, green beans, and (almost) the last of my black trumpets from last fall. The venison just seasoned and grilled. Blackened green beans and a marsala black trumpet sauce. Maybe I should do a mashed potato or rice too.

Damn! That looks good. I like the idea of bacon wrapped jalapenos stuffed with pineapple teriyaki cream cheese. I might have to try that one!
Last night I made a blackened swordfish with an orange and cinnabar chanterelle sauce, garlic and grapefruit asparagus and cheddar garlic mashed red potatoes. I'll have to remember to start taking pictures!

There's tons of great chili recipes online, but here's my go to quick chili recipe that tastes great, gets cooked in one pot, and is ready to eat quickly for chili. (about 1 hour) It seems like a lot of ingredients but it's basically just sauteing the meat and chili's then throwing everything else in and simmering for an hour.
1lb of ground beef or bison 1 large yellow onion 2 jalapeno chili peppers 2 serrano peppers 2 banana peppers 1 large can crushed tomatoes (or 2 small cans) 1 tiny can tomatoe paste 1 can black beans 1 can red kindey beans (I like the dark red) 1 can unsalted corn 1 tbs paprika 1 tbs apple cider or balsamic vinegar 1 tbs brown sugar salt and pepper to taste
Dice the onions and all the peppers and add them into a large pot on med-high with as much oil as needed. (a couple tbs.) Dash with salt while cooking.
saute until golden brown.
Add your meat and cook until rare. (you don't need to over cook the meat. It will keep cooking in the pot) Dash with salt while cooking.
Add all your cans of stuff except the tomato paste.
Stir well then add paprika, vinegar and sugar and another dash of salt and pepper.
Cook this on med heat, covered, for 15 mins.
Add the can of tomato paste, reduce to low, and simmer for another 45 or until you get really hungry and just want to eat it.
It tastes good after a total of 30 minutes. If you have the time to simmer for 1 hour it's better. Also the kinds of peppers can be swapped out if you have some favorites or want more or less heat. I always try to use 3 different types of fresh peppers though to give it a more complex heat. This also freezes really well so you can save leftovers for another time.

Tonight we had 2 mushroom pesto (yellow chants and black trumpets) with some fresh mozzarella slices. The only thing missing was some Parmesan garlic bread. DOH! I forget the bread...!
