Eggplant "lasagna" . . . thinly sliced eggplant layered with seasoned ricotta, sautéed chard, and tomato sauce topped with parm and breadcrumbs . . . with freshly baked French bread.

We belong to an organic produce buying club.  I drop $90/month on fresh produce from the mainland for the two of us exclusive of the rest of our groceries from the supermarket.  We eat what we can then preserve the rest.  We grow what we can in containers on the deck of the apartment, but without an acutal yard or the means to irrigate effectively, our output is sadly limited.  Especially for a city with a 12-month growing season (if you can find some shade in August).

I agree, there should be a much greater emphasis on creating and maintaining sustainable communities.  This includes planning for community gardens, reducing needless consumption of fuel and materials, and recycling.

Tonight: fried zucchini coins with marinara, mashed sweet potatoes with a little cayenne, and bacon-wrapped filet (for my husband) and veggie "stake" for me with fresh baked bread and homemade cholcolate chip walnut banana bread for dessert.

Any suggestions for my kabocha squash? Never cooked one but it reminds me of an acorn squash.

Stuffed red  bell peppers (ground beef & breadcrumbs & cheese for the husband, veg equivalent for me) with spicy sweet potato oven fries.  :tongue: Yummy!

Citrus & curry marinaded chicken (for the husband) or tofu (for me) with chick pea "stew" (garbanzos, red bell pepper, tomatoes, garam masala . . .)

(I'm trying desperately to approximate some Indian flavours! We are 4 hours from the nearest Indian restaurant.)

And, of course, more banana bread!

Whole wheat pasta with vodka marinara, oven roasted butternut squash, and sautéed kale (hidden in the sauce so my husband doesn't see it).  Grilled, marinated chicken breast for him and grilled veggie chik for me.

Sweet cornbread with homemade apple butter for dessert! (I know, not very Italian-ish, but super tasty!)

Veggie lasagna with whole wheat noodles, béchamel, marinara, rainbow chard, yellow squash, zucchini, heirloom carrots, and parm.  I like to use both white and red sauce on my lasagna.

P.S.  I typically browse with my iPad and don't think I can post pics from a mobile device!

We had pizza too!

Fresh mozzarella, feta, toamtoes, basil, baby portabellas, spinach, and red bell & banana peppers with tomato sauce on whole grain crust.

Kind of like a mediterranean sensation pizza.
