I'm living large tonight, got a Bloomspot promotional certificate for a Kitchen Counter 10 course tasting with wine pairing at Stefan's LA Farm.  The head chef took second place in the 5th season of Top Chef.  He's definitely a bit of an ego maniac, but his food is good and the price was right ($99 for 10 courses with 10 wine pairings).  And we get to sit in the kitchen to heckle the chefs (or vice versa :uhoh:). :hehehe:

LOL, he in fact wasn't even there... but there were no tater tots, cord dogs or hidden valley ranch salad either.  :lol:

Let us remember, Top Chef puts some very odd restrictions on their challenges to make them interesting as television drama, so we cannot expect that all of the dishes being made on the show are truly representative of their respective chef's usual cuisine or style.  On that note, you can learn about my meal here: Stefan's at L.A. Dudes, it's cool if you want to have a food diary, but at do us the decency of posting some porn so we can dream about what it was like to eat what you're ramblin' on about! :yesnod:

Example, for lunch the other day I visited Eden Burgers for the first time, a relatively new joint in Glendale, California.  Their truffle fries and dipping sauce were outstanding, as was their beer selection, from which I enjoyed a St Bernardus Abt 12 of the Belgian persuasion; but the star was this juicy special burger of the day - the "Bomie" - which consisted of 50% bacon and 50% 31 day dry aged ground beef, cooked a very solid pink medium on the inside while still retaining some nice caramelized crunch on the outside, with all sorts of nice accoutrement. 

Fucking tongue-gasm to the extreme, I tell you what. :drooling:

Then today, I made a soup from scratch using the carcass of a Costco rotisserie chicken (my absolute favorite $5 bird, so juicy and succulent and ridiculously cheap).  A heaping helping of deliciously organic vegetables all chopped up and added at the appropriate times, a handful of herbs and voila, heaven in a bowl.  I don't have a finished pic, but you can view a run down of my basic recipe and a couple of finished pictures here, if you dare.

I used flowering kale for the first time today, it was so damn purdy lookin' on the produce isle, I had to take it home with me. :sun:

Pasta was a carbonara (cream sauce, black pepper, pancetta).
Pizza was spinach, mushroom, artichoke and alfredo sauce. :toomuchacid:

I love me some quality stuffed cabbage leaves.  Had some absolutely epic ones at a Russian restaurant on a large ferry from Stockholm, Sweden to Tallinn, Estonia.  You should post up your recipe in a separate thread! :yesnod:

Tonights we got some grass fed smoked beef weens, grilled bok choi and delicata squash.

Roasted radicchio, interesting!  I assume they finish faster than the carrots?  Unless you cut the carrots super thin and left the radicchio in thicker chunks?

Realroll, nice lookin' fish dishes... I love me some fruit salsa with my fishies.  One of our family staples is a citrus (microplane the orange skin) honey/soy glazed salmon baked and served alongside a mango/orange/cilantro/green-onion salted salsa.  Some sort of steamed veggie or salad or sometimes even cous cous rounds the plate out.

Here we have chili cheese tamale with some home made pico de gallo for the kiddo...

   


And for me, a chirachi bowl and EPIC spam musubi with avocado and krab mix.

Dinner last night was awesome.  Tried a new pizza joint, Triple Beam Pizza... which is too far for normal delivery (if they even offer it), and a bit on the pricier side.  This had me hesitant, as I was never confident DoorDash could get it to me without being disappointingly cold and soggy.  But even though it wasn't hot out the oven, it was hot enough, and the chew of the crust with several pieces retaining good crisp, not to mention the epic toppings, sealed the deal.

  • Roasted Fennel & Sausage
  • Roasted Mushroom & Shallot
  • Spicy Salami w/ Green Olives & Calabrian Chilis

Even the dough knots were dankly succulent, decadent and impregnated with buttery garlic flavor.
