The smell can range from sweet to disgusting depending on the species of bacteria. It very uncommon to have contams in the center. Because if the contam was there from not being killed in the PC your jar would have never finished in the first place and likely would have had a lot of invitro pins in a reas that did colonize. Second scenario would be the contam penetrating a fully colonized cake. Which would require contaminating the outer edge of the cake before making it to the core. A fully colonized cake is resistant to contamination. Especially bacterial, since mycelium can secrete antibiotic enzymes.
You can usually smell bacterial contam through the GE holes but not always.

Also how common is this? I've never heard it mentioned before.
it depends, its not always 100% going to smell like something, and not going to be 100% that youl smell it outside the jar, or right up to your nose
the smell test is usually the last test right before spawning, if you can smell a contam from the outside of any type of jar, you should be able to SEE something wrong, should
of the countless contams ive had over the moons, i can think of possibly one or two jar that was cought threw odor and not sight, maybe one or two, this was quite awhile ago also
and dont think because it smells like a pile of mushrooms that your 100% garunteed sucess eighter
of the countless contams ive had over the moons, i can think of possibly one or two jar that was cought threw odor and not sight, maybe one or two, this was quite awhile ago also, nowadays i can visually see tell the difference between a contamed jar and a healthy jar 2 days after inoculation or so, the longer the jar goes the harder it is to spot at times, the last 14 jars of trich i had i cought all visually the day it germinated, i didnt know it was trich at the time, but i knew it wasnt healthy the healthy myc i was looking for

Blue bruising is from touching it, misting to hard, or drying out. It doesn't always recover completely and can be greenish. Don't worry about it
