Dinner for 30 (Laetiporus spp.)

This was found in a friend's yard last weekend. He didn't know what it was, and brought it to me for IDing, and now its my dinner. It weighed nearly 15# total. (For those who haven't seen or eaten it before, it's common name is Chicken of the Woods, and it really _does_ taste like chicken.)

I have made cultures, and if they take, I'll be happy to share with anyone interested. Occasionally you see plug spawn available, but from what I can tell, it can only be grown on stumps, cut log cultures don't work (though I plan on trying).

Anyone have any experience with deliberate culture of this species?

As a follow on to my last post, I have decided that this must be L. cincinnatus, and not sulphureus, based on the following characters: white pores, rosette shape, growing from buried roots (an oak once lived there), and the fact that the entire fruitbody is tender enough to eat.

That looks mighty tasty. I need to get my hands on some of that fungus. How do you prepare it? Big slabs in lieu of actual chicken breast? :lol:

It has a mushroomy smell when raw, and a slight hint of taste, but it really does tast like chicken, and it pulls apart exactly like cooked chicken breast, in long, striated strips.

Another nice feature of this species is that it can be frozen raw, for later use, with no effect on consistency or taste.

I was planning to freeze most of it, and use a few pounds in a pasta dish: "Chicken" in a shiitake and rosemary cream sauce.

I have two cultures of this musrhoom, but I haven't been able to grow yet. Cultures are of bright yellow color and sort of powdery - very different from any other species I've seen.

I didn't have the chance to try it indoors, I just inoculated a stump outside. I guess it will take some time before I see any fruitings.

Ever seen a mycomedicinals product that goes by the name of Qorn? I think it is Swedish. It's a vegan chicken alternative food and the ingredients simply list as "MycoProtein". I'm betting this fungus plays a large role in it's production...

Also, I'm curious as to what to nutritional content of this, and other species, is. Especially protein, and to a lesser extent fat, calories and such.

Quorn is made from fermented mycelium of an ascomycete fungus called Fusarium. I am not sure what the species is. I have tried it. It is okay.

r05 is correct, Quorn is a Fusarium fungus, and not a mushroom of any kind. I like it very much, as a vegetarian who remembers fondly the taste/texture of meat.

Quorn patties taste very much like McChickens, but are low in fat and calories and "junk" ingredients, and high in protein. Great for a quick lazy meal. The "ground beef" makes excellent chili or bolognese sauce as well.

As for the nutritional content of Laetiporus, I'd like to know myself.

Good news is that the cultures appear to have taken, and they are VERY fast, covering 2/3 of a 150mm plate in a matter of days. I'll post pix when I have a chance soon.

The clones I made took nicely, they covered a 150mm plate in a few days with lovely orange mycelium.

Anyone who wants to work with this, just let me know and I'll mail a wedge or to (PM Me with an addy). Please note that this is not an easy one to grow, and I expect recipients to experiment and post results here.

I'll post pics of the plates when my quota is freed up again.

Glad they worked.  Once I have some more experience under my belt growing edibles, I would like one of those cultures.  The idea of a an organic meat alternative sounds very exciting.  Still curious of the nutrional content though, especially the protein. 

How long will those cultures be available?  How long, once made, do they keep?

Cultures keep about 6 months. Give or take.

Actually, I did ofer it to anyone, myonly stipulation is that people share their cultivation experiences, since this is an experimental species.

I am also open to trades and future offers, though only for edibles.

WOW! looks tasty, I love chicken of the woods, they sell those at the union square greenmarket from time to time. I like to either saute it in butter, olive oil, garlic, fresh thyme salt and pepper, or marinate it and throw it on the grill.

Has there been any updates with this culture? I am highly interested in how this one is going. Laetiporus spp. is a mycorrhizal fungus right? So it could take years for the mycelium to fruit, would you innoculate a host with wood pegs? Or am I totally off and it is a saprophytic mushroom?

The culture is doing fine, though I have no plans to fruit it anytime soon.

An no, its a saprophyte. With stump loving species (eg sulfureus) you would peg a freshly cut stump, but I'm not sure what youd do with buried roots (as this one prefers).

I'd like to work out whether sawdust or log culture would work.
