I say camp however you want to camp. Can't say I've ever tried "Viking" style but it sounds cool.
I mean they got the right idea, but I personally like to take advantage of the modern advances in camping technology and materials.
For example, all the food stuff in that link is pretty much what backpackers do anyway: pickled/dried meats = beef jerky, hard/flat bread - most backpackers use flatbread, "pickled" meat and fish = sardines/tuna which many people bring. Dried fruit. Nuts. Hard cheese. Etc. These are the kinds of food people generally bring backpacking these days anyway, just he presents it in a more 'viking' style. But yeah backpackers aren't bringing coolers, so all their food is generally stuff that packs well and doesn't require refrigeration.
I like going back to the basics, but I like to take advantage of the modern things that are available. Lightweight sleeping bag/tent/hammock. Super compact penny stove that runs on alcohol, blastmatch or firesteels to light fire. Going minimalist, but not going super old school. In my mind, I just want to be as efficient as possible. Because to me, going "back to the basics" means surviving, as efficiently as possible and getting the most work done with the least amount of energy. So all my tools / etc are geared towards that. That's just my style though.
I say camp however makes you happy. Viking primitive style would probably be fun.
I have no interest though in wasting energy to build my own shelter, carve my own tools, etc... if I don't absolutely have to.
I bet GuruBushHippie has some things to say on this, pretty sure he teaches a wilderness survival course or some such?
