I suspect they are concerned tinfoil will be blown off what is being cooked and jam the pressure-release valves. This won't happen for tinfoil held in place by a jar lid.

There may be other reasons..

I have used aluminum foil in my jars for years and have had no problems. The companies are most likely just trying to protect them selves from lawsuits.

Just dont place it on so tight or steam will not be able to enter the jar and facilitate in the steaming process. Afterwards, i press the foil on tighter to help seal.

I use an All-American and have had no problems to date.

I sure as hell have had bad luck with the pressure cooker I bought from Bi-Mart. I even double wrapped them in foil and all of my jars got completely swamped. Any reason why this would happen? I followed the instructions in the book too.

Does your jiggler only jiggle about 3-5 times a min? I should, any faster and you have the heat toooo high and this may be causing too violent of a boil forcing water up under the edges of the foil.

If you start using Qts. or 1/2 gals you will no longer have this problem. The opening is too high for the water. (I know, duh :biggrin: )

Or, if your p.cooker is tall enough, just use 1 layer of empty jars and then the divider and then your substrate jars, my cooker will do 4 layers for sure, maybe even 5, but I don't have the extra rack so see for sure and 1/2 gals are so much more efficient anyways.

Not sure if any of this is of help, but hope so.

Yes, that was much help. I think I had them boiling too fast. SO, the jars don't have to be in the boiling water of the pressure cooker? Will they sterilize the same?

Yes, all levels will sterilize the same, Mine will hold 4+layers of 1/2 pts and all are good to go. It is the steam and preasure that sterilizes not the water.
