The PF double-ended casing tek is listed in full detail at his site. You can find it if you scroll down from the original tek. It is under PF TEK add on technigues.

Basically, from what I can gather, the double-ended casing tek is just applying a thin later of moist vermiculite to the top and bottom of your PF-style cake. That's pretty much it...

1) Fill jar lid with vermiculite.
2) Soak vermiculite with water.
3) Squeeze out excess water.
4) Stick cake on top, so that the top of the cake is on the vermiculite.
5) Repeat but put wet vermiculite on the now 'top' of the cake.

I think that flipping the cake over when casing is a good idea because for most of its life its sitting on a soggy jar lid and the chance of mold is increased. If it is flipped over and allowed to get away from surface water, it must be a good thing.
