Easy, Inexpensive & Scalable Bulk Pasteurizer - Requires No Monitoring & is Hands Free in Operation * 4

Since I'm no longer going to be growing actives and have moved onto edibles, I needed to make a bulk pasteurizer.  I've made one, and figured others might want or need to make something similar, but not know how.

So, here is a Tek that will show you how to make a relatively inexpensive bulk pasteurizer for your substrates.

This pasteurizer requires no monitoring like other pasteurization methods do.  In other words, you don't have to play around with finding the right time to stop applying heat so you don't overheat your sub, you don't have to play around with adding more or taking away insulation to keep the correct temp, you don't have to worry about uneven heating of your substrates, etc.  This bulk pasteurizer is guaranteed to pasteurize your sub perfectly every time.

On top of that, you can "scale" this pasteurizer to be larger or smaller, based on your needs.  You simply get a larger or smaller container...it's that simple.

How it Works:

I'll start this thread off with how the pasteurizer works, and then if you'd like, you can read on to see how to make one for yourself.  The total cost, provided you have a cooler laying around (you won't have to ruin it, don't worry) is less than $100.

Here are all the pictures of everything needed & then assembled.  The text below will explain anything you don't understand:


This bulk pasteurizer works by using a "bucket heater" (think aquarium heater on crack...it has no temp control and heats mass amounts of water to near boiling temps) to heat water in a large container of your choice.  I use a cooler, as it is large and holds the temperature pretty steady.  The bucket heater is turned on and off automatically using a Ranco digital temperature controller.  A "ranco" works like this...you plug it into an outlet, use the buttons on the front to set the temperature you want maintained, then you put the thermistor (thermometer probe) that's attached to the ranco into what you're monitoring the temperature of, and then you plug the device that applies hot or cold temperatures into the ranco and it automatically turns that device on and off to maintain the pre-set temperature.

In the case of this tek, here is everything laid out specifically:

I fill a cooler with water.  I plug the ranco in, and set it to maintain 150F.  I then put the thermistor that's attached to the ranco into the water in the cooler.  Then I put the bucket heater into the water and plug that into the Ranco.  I set the ranco to a 5 degree differential (goes to as low as 1 degree) which means that it will keep the bucket heater on until the water is 150F, then it turns the bucket heater off until the water is 145F and then it turns it back on and the cycle repeats.  I set it to a 5 degree differential to reduce electricity usage and to prevent a lot of unnecessary cycling on & off of the bucket heater.

Then I put the bags of substrate into the water, and the ranco controls the temperature of that water to perfect pasteurization temperatures (145F to 150F).  Lastly, I use an additional digital thermometer to monitor the internal temperature of one of the substrate bags.  It's a digital thermometer that you can set to sound an alarm when the desired temperature is reached.  So I put that probe into the center of one of the substrate bags, and set the alarm to sound when it reaches 140F, at which point I start my 90 minute countdown.  No watching, no babysitting, no nothing.  Set it and forget it.

It should also be mentioned that the water in the cooler is circulated using an aquarium pump.  This is key to make sure you're applying even heat in a larger container like a cooler.  Provided you use the same amount of substrate in each bag, each bag will heat in perfect unison...in other words, they heat evenly at the same time.

Here are the timeframes for what you see in the picture (4 bags, each bag holding 8 quarts of substrate, for a total of 32 quarts of substrate):
  • 55 minutes for the water to reach 150F (I fill the cooler with the hottest water possible from my faucet which is 110F so it takes 55 minutes to go from 110F to 150F with the bags of substrate in the water).
  • With the 5 degree differential, the bucket heater comes on & turns off roughly every 12 minutes.
  • From the moment the bags touch the water, it takes about two and a half hours for the internal temp to hit 140F.



Anyway, on to the tek.  Here is what you'll need:

  • Ranco ETC-111000 Digital Temperature Control - I originally was using a Johnson Controls, but that went to the smoker.  The ranco is less expensive and can be purchased for less than $50 shipped.
  • Aqueon 06131 Aquarium Circulation Pump 500 GPH (gallons per hour) - Any aquarium pump that does 500+gph would probably work.  The only reason I mention this one specifically, is because I've tested it and I know that it works in water that is 150F+ degrees.
  • Allied Precision Bucket Heater 742G - Nothing special to say here...it's just a bucket heater.

Additional Items You May or May Not Need, Depending On Your Choices:

  • Power Strip - You can buy the Ranco pre-wired, ready to plug into an outlet or you can buy it unwired and you'll need to wire it yourself.  I chose the latter, as it's less expensive.  If you buy it unwired, you'll need a power strip.  Here is a video that shows you how to wire a ranco (it's stupid simple, and takes about 15 minutes:

  • Digital Thermometer with Alarm - This just makes your life easier.  You insert the digital thermometer's probe into the center of one of the substrate bags you're pasteurizing, and you set the alarm to go off when it reaches a desired temperature (in this case, 140F).  As soon as you hear the alarm, you start your countdown.
  • Wire Rack/Shelving & Something to Elevate It - I added this because I wanted to make absolutely sure I was applying heat evenly.  As you can see in the attached pictures, my bags are jammed in there pretty tightly up against the sides of the cooler.  If there weren't elevated off the floor of the cooler, it would be basically impossible for the pump to circulate the water around the bags.  However, if your substrate bags aren't jammed into the cooler as tightly as they are in the pictures above, this may not be necessary as the water can easily be circulated in a circle around the sides of the bags.



After you have the above items, it's basically just a matter of selecting your pasteurization container.  I've tested the bucket heater in both a cooler and a regular tupperware container (think monotub container) and it didn't damage either one of them.  The cooler just holds the temperatures much better.  Obviously, the larger your container, the more sub you can pasteurize at once.  What's great is you can easily scale up or down, depending on how much sub you have to pasteurize.

Then go ahead and mix up your substrate and put EQUAL AMOUNTS into however many OVEN SAFE bags you have/can fit into your container.  I stress the "equal amounts" part, because you want each bag to heat up evenly.

Then just put your bags into the container, fill the container with water, plug everything in and you're good to go!

For the Ranco, check for local industrial supply stores and HVAC supply stores.  The Ranco is built to industrial standards and is used in a wide range of industrial applications.

The bucket heater, that's a little tougher.  Check your local equine supply stores, if you've got any near you.  Other than that, I think you'll just need to call around to home building supply stores.

The Aqueon is carried at petco, and I think petsmart also carries it.

The rack, PVC, power strip can be had at just about anywhere, and you can get the digital thermometer that sounds an alarm at a preset temperature at pretty much any "big box" store.

I just built this very same idea...
But I went a little bulkier...
I used a keg for the bucket and a deep freeze for the steam chamber.
I love those little ranco's. they're badass little machines

Nice one! Clever tek fella! :laugh: A alternative to the bucket heater is you can order the heating coils and temp control to a catering bain marie. Might be harder to find but they have automatic temp control on them. Catering supply stores usually have a bunch of broken bain maries so you can just mix and match parts.

SGFC your one crafty fella. I've used a cooler in past but always hated maintaining the temperature by having to add more hot water. For a 100 bucks to save yourself some headache I think its worth it

Any suggested readings for cultivating edibles? I'm just like sponge right now, trying to learn more

Paul Stamets' books are great, but some of the information is outdated.  I have a species list up in my journal and on my forum that I am in the process of updating for accuracy and ease of use.

A lot of the information I found that got me started in edibles and medicinals came from Myco-Tek.  Check out Professor PinHead's Reishi logs, that's a cool medicinal :smile:

Yeah, I can't believe I didn't have one before (a ranco).  Just having it in the house makes me want to build other things that can make use of one, haha.

As for what you set up, it sounds massive...I like it :laugh:  Any chance you could elaborate on the setup?  What do you mean by "steam chamber"?

Thanks a lot PSN, I sincerely appreciate it.  Especially coming from somebody who has been perusing these forums for what looks to be SIX years!  (that's a compliment by the way).  I love this hobby more than I can explain, haha, and I can only hope to be involved in it as long as you (at least, as long as it looks like you have).

As for your comment about the $100 being worth it, you're absolutely right.  Being able to set it all up and walk away and not think about it again is definitely worth the money...especially doing large amounts of sub, as the more you need to do at once, the more often you'd need to change the water.  Something else I love about the setup, is it disassembles into completely normal looking items.  Nothing is modified or damaged, so there is nothing to explain, haha.

I definitely recommend Stamets books, however I have found most of the information I need/use right here on this site (and some others of course).  Check out some of the links DeathRyder points to, they will surely be useful as well.

yeah, actually what i did was a little different. i didn't really pay attention to exactly what you had built, which by the way looks very nifty and probably takes a lot less time than mine to get up to temp and what not.

but instead of a bucket and a cooler, i used a keg and a deep freezer.
the keg has the heating element in it which creates steam and the steam goes into the deep freeze to "steam pasteurize"

those ranco's are nice to have, i'm sure you'll put it to use with something else, i already have it as part of a couple different things.

Ohhh, I see.  Very nice (to NineInchNails on a nice design, and to you for ramping it up to super-size, haha).

I've actually got a Johnsons Control (does the same thing as the Ranco, but was a little more expensive) and I moved that to the smoker I've got, and I've been toying with the idea of brewing my own beer, and I understand that would probably benefit greatly from having this handy little Ranco around :smile:

The Ranco ETC-111000 can handle 110V or 220V heat elements. There are wiring diagrams in the instructions that come with it.

Walmart is has a GREAT price on their Igloo 100 Quart cooler $54 and free in sore pickup ! ! ! That's 25 gallon capacity. I have one of these coolers and they are wonderful. Very very well insulated and easy to modify. Igloo sells replacement hinges, latches, drains, etc... too.
