Hypothetically speaking, if i were to cultivate shrooms, what are the risks involving police?

If you or a roommate sells drugs to an informant, they could get a warrant to search your place.

If one of your appliances catches on fire due to an electrical problem, you'll have police in your house in a few minutes, and they can charge you with anything they find.

The landlord could do an inspection and find them.  The law says he has to give you notice, but if he doesn't, or you are out of town when the notice comes, you'll still get just as busted.

If an old friend visits from out of town and he is wanted, the police might come to your house to look for him.

If you piss someone off online and that person calls the cops and says that you are holding a kidnapped person, the cops can search your house and use anything they find against you, even if you never kidnapped anyone.

The person who has the apartment above you could overflow the bathtub, causing plumbers to enter your place.  If the plumber sees something illegal, he can tell the cops and you have no recourse.

A burglar could break into your place, and if a neighbor sees him going through a window and calls the cops, they can enter without a warrant and charge you with anything they find.

I know all these things sound unlikely, but you can't predict the future.

Do they have a red-flag odor like weed does?

No.  But one homeless guy got busted growing in a storage locker because someone smelled the cooking grains and thought that was suspicious.  In a house, that kind of smell is normal.

Are police actively looking for shroom grows like they do with marijuana grows?

No.  They only find mushroom grows when they get lucky.

it and rang police

The postman smelled what?  A smell of cooking grains isn't enough to get a warrant.

I dont think youd be able to hide it from a roomate

Good point.  The roommate could do something to get the cops to come in, you have no control over that.  Could be a domestic disturbance.
