The best way to cook salmon steaks

The best way I've found to prepare salmon steaks is as follows...
Get the steak and marinade it in lemon juice, rum and italian dressing for about half an hour. Preheat your oven to 300 degrees. Wrap the salmon in aluminum foil with the italian dressing and some slices of oranges in the foil as well. You want the skin down and the oranges on top. MAke sure you have a few table spoons of the Italian Dressing in the foil. Wrap it up nice and tight so it's somewhat "air tight". Cook for half an hour to forty-five minutes. The heat makes the dressing poach the salmon, deliciouso! The meat slides right off of the skin! Enjoy with a white wine of your choice, pinot grigio works just fine

id liek to say its not good to marinade anythign in to much lemon juice as it makes it tough. but samon being very fatty im sure it is tender.
one good way is glaze the samon in maple syrup and olive oil salt and pepper. place on a soak ceder plank and cook on the bbq. thats soem tasty stuff.
eat with boiled down maple and lemon sauce

My exwife takes the salmon steaks and glazes them with orange marmalade that she thins out a little with white soy sauce.Then she either smokes or steams them,wow they are good .I cook them the same way now sometimes but i do them on the grill .

Here's how I like it.
Marinade the fish for an hour or so in a half and half mixture of soy sauce and lemon juice. Poach the salmon in the marinade - make sure the marinade does not cover the fish. Add a slice of onion to each piece of fish and let that cook as well. A few minutes before you remove the fish, top with parmesian cheese untill melted. Salmon should be cooked just until under done in the center.
This is very easy and very good.

Salmon is awesome! I'm a big fan of mustard on my salmon. Almost everything else goes too, so I don't really have a set recipie - just whatever I have on hand.
Typically I'll prepare a large piece of foil with the salmon fillet or steaks inside - throw in a couple chunks of butter (as if this fish isn't luscious enough ), then I'll smear on dijon mustard, although country/whole grain works well also, then I usually add in a bunch of chopped onions and perhaps some dill and/or pepper, a pinch of salt and a small amount of citris juice (lemon or lime). Wrap it up and throw it on the grill, high heat for a few minutes per side (provided I have fresh salmon I like it to be pretty raw on the inside).
Pan searing is another good way to go if ya got the balls to time it right

the way i grew up fixing salmon is to wrap and bake or barbeque it in foil slathered with garlic, pepper, margarine, and mayo similar to what op described. it's delicious but i still like alder hard smoked better.

It took me a while, but after cooking salmon enough times, I saw the light of going for medium-rare.
Now when I eat a salmon well done I get a little sad.

Actually, my preferred method of cooking salmon is either confit in oil or slow baked in a 200F oven so that you don't get any of that white protein coagulation: a definite sign that you overcooked it.
overcooked salmon to me is like overcooking tuna: might as well open up a can.

I've never tried confiting it, although I've sous vide it, but didn't think much of it.
Oven baked is very delicious as well. I like to make a crust of bread crumbs and chopped dill on top before baking it.
When I was vacationing in Seattle I was able to try a couple varieties I wasn't even aware existed. FUCK their seafood is so good up there....When I went to the fish market they also had barrels filled with really fresh, firm, glistening halibut cheeks. Unbelievable.

My big regret was not buying a bunch of those halibut cheeks and pan roasting them with butter...

Heh, I love raw salmon too... kinda funny that salmon is rarely served raw in Japan. Apparently they consider it too oily/gamey of a fish to be appropriate for raw service, hence why they generally tend to salt and cook it. But hey, I loves it both ways, so long as its cooked well.

I never noticed a "gamey" taste, but the "too oily" is why it's so good. It's almost like eating butter, except it's probably good for you. You'd think Japan would have better taste in sushi than that.

Hehe, yeah I was a little shocked when I heard about it myself. And yeah, "butter" is the best descriptor I've found for the deliciousness that is raw salmon.

Who would eat butter? Basically the same people that would eat chocolate. It's a fat that melts at a very low temperature, which makes your body produce all those feel good chemicals for some reason. If you've ever had shortbread, (which is a low in sugar, high in butter cookie) you'll know exactly what i'm talking about.
