Shepard's Pie + Fungi Sugar Snap Pea Sauté 4

One of my favorite comfort foods, a good hearty Shepard's (lamb) or Cottage (beef) Pie. I like to mix it up and combine lamb and beef in my pies. Here's the low down...

For the Meat Portion of the Pie:
- Bit o' olive oil to grease the pan
- 1 lb ground lamb, 0.5 lb ground beef
- 1 large carrot
- 1 large onion
- Rosemary (half handful)
- Thyme (half handful)
- 4 cloves garlic
- Salt & Pepper
- Worcestershire (several splashes)
- Tomato puree (one small can or less)
- Red wine (several splashes)
- 1/4 cup chicken stock
Get this started by washing and preparing your vegetables and herbs. Grate the onion and carrot or, if you don't have a grater, mince very finely. Optional: fresh peas (I'm opting to serve snap peas as a side dish)

Heat pan with the olive oil and brown your ground meat, stirring frequently to break into small pieces, 2-3 minutes. Drain off the fat and add your vegetables, garlic and herbs. Continue stirring frequently to homogenize for 1 minute.

Splash some Worcestershire sauce into the mix, your tomato puree and red wine. Continue stirring and allow red wine to cook off for another minute or two.

Finally, add the 1/4 cup chicken stock and cook off for one more minute. Don't forget to taste and adjust seasoning as appropriate! Heap that delicious mess evenly into a baking dish, like so.

For the Potato Portion of the Pie:
- 1.5 lb golden potato
- 1/4 cup heavy cream
- 3.5 tbsp butter
- Salt & Pepper
- 2 x egg yolks
- 1/4 - 1/2 cup parmesan cheese
Start by cleaning and chopping potatoes, and boiling in salted water for 15 minutes.

Drain off water and add all of the above ingredients, then mash.

Optional: Put mashed taters in a bag and cut off the corner to allow you to make li'l peaks in the baking dish.

One way or the other, put taters on top of meat in baking dish and sprinkle with more parmesan cheese.

Bake for 20ish minutes at 400*F, or until the tops of the potato are getting golden brown and delicious.

While you're baking off your pie, start on the side dish. Side dish cook should commence 5 minutes prior to service.
For the Fungi Sugar Snap Pea Saute:
- Handful of fresh sugar snap peas
- Handful of fresh mushrooms (I used half brown common and half chantrelle)
- Pat of butter and/or olive oil
- 1 clove garlic
- A tbsp or two of paper thin sliced carrots
- Salt & Pepper
- A sprig or two of thyme
With your mushrooms cleaned and sliced, warm butter in pan and add sugar snap peas & carrots. Cook medium for 2 min.

Add the mushrooms, garlic and herbs and continue saute for another 2 - 3 min on medium. Season with salt & pepper.

Plate it up and enjoy!

This must be the "diet" heart attack pie. I like how you made peaks in the potato layer to add more surface area for roasty goodness.

If tomatoes are added, it's known as farmers fuller here.
Personally I add more onions and use no tomatoes. I love tomatoes, but I like how shepards pie can just be lamb and onions with spuds. Of course, like most of my meals, it ends up having everything i can get my hands on. Especially tumeric. Fuck me I love tumeric.
