:hi5: Shame it's only one. If I were you I'd think about removing the soil-cake from the pot and putting it in a larger container full of some kind of horse manure blend. Hopefully the mycellium will spread :super:

When the gills start to turn dark and become mottled, it is ready. you'll be able to tell. Looks like it could go for a day or two. Let it drop some spores for a while before you pick it.
