Pressure cooking with no gauge question

My PC does not have a pressure gauge.

I seem to recall it does NOT hit 15PSI, but somewhere below (ehh, 12? 13?).

I've been using it for a couple of years, and it has worked but I had a bad batch if quart jars of rye when I did it at 60 minutes.  All after that were done at 90, and went just fine.

What is the "correct" amount of time for those of us without pressure gauges, and is it the same for rye quarts as corn quarts (2/3rds filled)?

I always cook my rye berries 90mins with perfect results

Make sure your using the filter disks from themadseason.com for your rye jars.

No less than 90 min @ 15psi for grains.

I usually do 120 min just to be safe.

If you're using a Presto, the only way to know if you have the heat up high enough is to look at the pressure gauge. Prestos don't have a pressure indicated weight :frown: In order to run at a higher psi you have to turn up the heat and watch the pressure gauge.

I suppose you could wing it, but that doesn't ensure effectiveness or consistency.

You can buy replacement pressure gauges at local hardware stores or online.

If you drop water on the lid it should evaporate in a split second if the PSI is high enough.  Go 120 minutes to be safe.

No gauge designed in.  Just a weight.  And the long thrown away docs are of no help.  And I'm not putting more pressure than it was designed for.

Ok, 120 min for now on.

Check the weight.
It should tell you the PSI it goes to.
Even All American Co. says not to trust the pressure gauge on the unit, because it's geared.
The weight is what tells you what PSI you're at, not the gauge.
When my AA930 is at 15 PSI, the gauge shows 14 PSI.

When my old presto 15psi weight starts to jiggle my gauge shows 16psi

Mine pc is an aliminium , roughly 8 litters .. And it has also weight .. I do know it can produce only 12 psi... I generally get wet spot bacteria... I did not get any other contam when i do 90 mins..contams comes after some 8 days..

"generally"?
Meaning you rarely have a good batch? What do you do?

I'm pretty sure mine only hits 12 as well, and I've had 1 bad batch out of many, and that was at 60 min.  The 90s all came out ok, using rye.

I'm trying both popcorn and rye on this run, and I'll know in a week.

QFT, at least.

I do 120 minutes at 14-15 PSI no matter what in a PC for grains.
For my sterilizer, since it goes to 20, I run it at 17-19 PSI for 90 minutes.

this is one of the most answered questions in this forum! my advice, UTSE, OR take a picture or give us a model number off the PC or anything that we can use to identify your PC, that way we can learn the capabilities of it. I think most PC's with no guage run at 15 PSI when the jigger starts moving. the idea is to cut it down just a bit so that you're at 14 PSI, but that can be hard to do even with a guage IME.
