Discrepancies with book and general practices here. Looking for clarity.

Hello this is my first post, I've been lurking for a few months now and am 4 weeks into my first grow using B+. 5/8 of my jars are completely colonized and I've lost 4 to contamination to cobweb mold within the first week.
I've been reading the 2006 book "Psilocybin Mushroom Handbook Easy Indoor & Outdoor Cultivation." by L.G. Nicholas and Kerry Ogame.
First of all any general consensus on this learning material? 
Second, I'm finding several discrepancies with the "PF Tek Improved" method listed in this book. Looking for some input for those with experience.
#1. 8 on/16 off light cycle? I've been reading 12/12
#2. These guys are not birthing their cakes. They are re-hydrating in the jars and fruiting directly from the jar?
Seems to be this would affect the yields? Anyone have ideas on this?
3rd and final question is unrelated to the book.
My jars are completely colonized but do not look as white as many I've seen. Attaching a photo to get some advice. Thanks to everyone for posting and providing ample advice for me to start this little adventure!

If you check out the "Everything A New Cultivator Needs To Know!" guide linked in my signature, I've compiled a guide that will help you out a lot.

Fruiting in the jars is possible, but it does tend to decrease overall yield, and some of the fruits will be a pain to harvest since some will grow down towards the bottom of the jar.  You're going to be better off birthing them to a shotgun fruiting chamber.

In the line of icons at the bottom of a post where it says "Post Extras" there is an image of a head with a rectangle, if you scroll over it a "PM User" label should pop up.

The jar looks good, how long has it been consolidating?
