I have never myself used a SGFC, but I think it is the perlite and misting that maintains the humidity.
Depending on the RH of the room will be somewhat of an environmental factor. I live in a very humid area, so it hasn't been much of an issue for me. Though my grows are done in a greenhouse now. You can really fine tune an environment with one, but some argue the maintenance is too high.
By backroom do you mean closet?

I'm not using perlite. I don't see how that could be done unless I put the dubtub itself into sgfc with perlite. It's considered my closet, but It's bigger than a walk in closet. An unfinished room if you will. RH on it's own throughout the building is 60%.
I thought about just throwing it in a bigger plastic box and putting a lid to trap humidity and take it out periodically for good fresh air exchange, don't know if it's a good idea or not.
I had 100% humidity throughout the incubation of the coir/substrate and removed the lid and put the pre-made top on it and that's when the humidity of course dropped.
I know some people make mini-greenhouses out of metal shelves and plastic sheeting, but I'm trying to be discrete.
I was under the impression though that after making the modified monotub most people let them grow on a shelf or wherever.

The link you gave to Doc_T's dubtub is in a greenhouse setup. This will change your humidity situation. You want 95 for knot formation. The ambient (house) humidity differential is problematic, and the substrate might be low on moisture, which would help create the humidity in the dubtub. 80 will work, but who knows if that hygrometer you bought is functional. I
You can try covering some of your holes on the top portion. You can check your moisture the next time you go with this setup. You could make a monotub and see how you like the difference.
Some pics of your surface will help.

Appreciate it. I don't believe the substrate is too dry at all. I moved it into a bigger Tub and drilled just a few for a little FAE, sprayed the sides. I'm going to go buy perlite tomorrow, maybe those geo reptile rocks and then convert the tub into a monotub housing for the smaller tub completely. Need to anyways, I have Ecuadors in pf tek that are ready.

Moving it to the bigger FC raised the humidity by 6% so now it's sitting on around 86-88% humidity. Makes me a feel a little better.
My Pf tek is doing pretty good as well. The only thing is I messed up and used pint jars, so i ended up having to cut some Verm/brf that wasn't colonized around the bottom, but I now know why you shouldn't use pint jars... takes forever. Oh, well not a bad first run. Second run will go much smoother next time.
