Bad first flush or just not patient enough?

My first try has not been at all what I expected. First the brf and verm shrunk and pulled away from the jars when I pressure cooked. Then the cakes took 7 weeks to colonize, they were in tall ½ pint jars. It took so long that I saw white fuzz on them and thought it must be mold but it was just mycelium. Then I had to leave them in the jars for 2 extra weeks because I was away. Each one had a few pins on it by the time I birthed them but they were hanging just barely on so I took them off, figuring if it was pinning it would have no problem continuing to do so. I dunked them for 24 hours and rolled them in verm and have had them in a sgfc for a week. Only one cake has fruited at all and they seem to be going fast, every time I look at them they look bigger. The biggest one had broken its veil and was drooping to the perlite so I picked it to make my spore print and found that it had a hallow stem, also it was only about 2 inches long. Of the remaining 3 for that cake, 2 are breaking their veil now at about the same length and the 3rd one is smaller so itll probably be 2 days behind them. So my questions are, should I let them wait even when their veil has broken to pick them all at the same time? And, should I just be more patient with the other cakes to fruit? Additional information… There’s 4 inches of perlite, a good daylight color light on a 12 hour timer, I mist and fan 4 times a day, the hygrometer says 80% but its nonadjustable and reads 80% when wrapped in a wet towel, so I assume that’s close to 100%. All in all I just wanted to try mushrooms for the first time and so it looks like I’ll have enough for that, but it’s a shame to not have it turn out better. Thanks for any help.

Whats wrong with the hollow stem? Most cubes have them. Pick when the veil opens. Make some spores with what you picked. Slow down, use the right jars, stop waiting for water to boil. You will get the hang of it. Wait a minute, were you saying that the open cap of the mushroom was touching the perlite? Do not use for prints if so. There will be many more to use
-------------------- Stop experimenting half way through your first grow. Grow it to maturity, watch it, learn from it. Do this a few times then experiment with different ideas and figure out what works best for you.

when fruited at lower temps(mid 60s to mid 70s), cubes tend to produce thicker, meatier stems.
when fruited at higher temps cubes tend to have hollow stems
if u want to take some prints, wait until the cap opens and it starts to flatten out
if u r picking them to eat them then pick right asor before the veil tears
waiting until the cap opens and flattens will give u a little bit more weight

Oh, I had read somewhere else someone talking about hallow stems so I thought it was undesirable. I wasn't too worried about that though because weight is weight no matter if its hallow. Also, no it didn't touch the perlite but it was getting close and the cap was open and flat, also I'm only making that spore print onto a piece of glass to frame as a memento of my first try, so I'm not too worried about that either. Mostly my concern was with the other cakes that haven't done anything and whether I should pick the fruits just as the veil breaks even though their pretty short. Thanks again guys
