just because you fail at brf doesnt mean you cant do grain.
i failed badly at brf :/. i would probably own it now if i tried it, but im rockin grains now and will never look back

I'll start with this:
If you've successfully done BRF grows, and you've at least got a glovebox to work in, move onto grains.
Before I address each of your specific points individually, I'll say that I think your only issue is a lack of moisture in your BRF jars, and I think that is because of your new lids.
Those lids were really designed for use with grain jars. The reason the grains don't dry out with that lid design is because of a couple of reasons:
- Grain jars are typically quart jars, so there is significantly more "material" in the jar, and therefore would take much longer to dry out. 1/2 pint jars are much smaller, and therefore will dry out much faster.
- Grains "hold" the moisture on the "inside" of their shell, making it more difficult to just "evaporate away".
- On top of all that, you've removed the dry verm layer because you're using a lid design that doesn't need a dry verm layer to act as a contam barrier. That dry verm layer that you were using before the new lid design not only helped prevent contams, but it was also helping your jars retain moisture.
Now, to address each of your points specifically:
1. I think you're absolutely fine sifting your verm. I've done BRF jars with coarse, medium & fine grade verm, all of which worked when following the Tek to a "T". The best results were had using fine grade, but as I said, it worked regardless of the grade. You mentioned that you notice a pool of water after mixing the water & verm. That DOES mean the verm isn't holding as much water on it's own, but since you're not dumping that water out, your jars don't have any less moisture in them then they did before. You also mentioned that your BRF is clumping...that would be caused by the pool of water. The instant the BRF hits any kind of water that isn't already slightly absorbed by verm, it's going to clump (that's why we mix the water with the verm before adding the BRF).
2. I pretty much already addressed this point above.
3. I don't think your spores are the issue. I've used year old syringes just fine. They took a bit longer to germinate, but just fine nonetheless. I think all your issues stem solely from a substrate that is drying out long before it should.
