QUESTION ABOUT DOC'S WBS TEK

My question is, because the overall process of preparing bird seeds to inoculate or do G2G, is there a point throughout the tek where the bird seeds can sit for half a day and not get damaged? I let it sit submerged in water for 14 hours and am ready to drain again then simmer but I realized I don't have enough tykev. Does this present a problem? Would it be better to let the seeds sit before or after simmering? Should I try to shove it in my fridge? If anyone can provide me with insight, I'd greatly appreciate it. Thanks!

Nope you will be fine, I have soaked grains for 48 hours, no problems, left them out to dry after simmer for 2 days, they still did fine. Just make sure you PC them and get the moisture content right before doing so.

Yes, absolutely; thanks. I've actually recently been getting the moisture content wrong bc I've neglected to simmer. I will absolutely simmer from now on, but do you (or anyone else) have any tips for perfecting the moisture content? And yes, PC is implied.

What I do normally, and ALWAYS get perfect grains/wbs (I have jars going right now that are 50rye 50wbs mixture)
Rinse very well
24+hr soak in coffee-water + gypsum(longer the better as long as you don't go over 3 days, they start to ferment)
Then simmer on a high boil until I feel is enough, usually 10 mins on high, stop boiling if you start to see any burst seeds/grains
Drain them out into a strainer/colander shake off until the steam starts to stop flowing off the grains, then lay them out on a bath towel or whatever you want. Let them dry out for 15+ mins, then load into jars.
Works EVERY time.

I never tried the 50/50 wbs/rye may try that. Personally i never had luck with WBS i love my rye

Okay I will do that. I guess I might as well let it soak overnight again so I do everythig once tomorrow. The whole point of the simmer is to dry it out? So, after you do that and rinse, will the absorption be different because of the simmering process? I hOpe the bath towel works to dry the seeds. I've never done that before.

The longer you let it soak the more endospores have come out of hibernation and the more will be killed by the pressure cooking. Just make sure you pressure cook them correctly and for long enough. I would suggest to PC the grain now for 15 mins at 15 psi, and then pc again for the full 90 minutes tomorrow when you have your tyvek ready. If you want to do even better, then pc tonight for 15 minutes, tomorrow for 15 minutes, and then the day after that, for 90 minutes. This is actually better for the killing of endospores as it is a form of Tyndallization.

Where exactly should I look to obtain rye? What exact terminology should I use to refer to the rye I want? I've never tried rye, but am very willing (using the RR tek link you have in your signature). Any help is appreciated.

pcing the grain for 15 mins is a waste of time imo. there is always going to be endospores but with proper techniques and inoculation the mycelium is always going to win the colinization battle

When you go to buy rye, ask for "Organic Rye Berries" or just "Rye Berries". Alot of organic markets and nutrition food marts have them. Many other places as well.

Most places do not carry rye berries, so if I was you I would find all the places you think might have them and then call each place and ask, so that you don't waste a bunch of gas and time. I checked about 30 places in my town until I finally found 1 (and the only 1, sadly) place in my town that had them. They only sell 1 pound bags of them, but I usually get 2 bags each time I do jars and that is enough to do about 7 quarts.

I pay about 8$ for 2 lbs of organic rye.
Yes, WBS is cheaper, but in my opinion it has many downfalls compared to ORB.
I do, however, use both ORB and WBS. But only use WBS when I don't have the extra cash to buy ORB.

Yeah I was referring to rye berries. They have them for, including s/h, 2lb for $13. I would like to try something besides bird seeds, so I'm going to order this.

You do save cash by buying more at once, but if you're low on funds then 2 lbs should do you just fine, and if you're really low on funds then you can always just get some WBS.

if your low on funds you go to j-mart or dollar general and get a 10lb sack of wbs for 6bucks and make 30 jars. not 2 lbs for 13$ and make 1 monotub

I wanted a small quantity because I have never used rye berry before. If its relatively easy to use, then I would rather get the large quantity. I have a significant quantity of quart jars and I'm always trying to keep them filled with something.

I feel stupid asking this, but regarding the simmering process of Doc's WBS tek, are you supposed to have the WBS submerged in water? It doesn't say anything about doing that, but I feel like it would be too easy to burn the WBS while cooking.
