first, a hearty thanks to you all. i've been browsing for a couple months now, but this is my first post. anyways, i just finished PC'ing popcorn jars with tyvek filters and plastic lids (3/8" holes). if i dont want to inoculate just yet, can i cover with saran wrap and keep 'em in the fridge until ready?

yep, but i don't know if i would put them in the fridge, lots of contams in there, and it's unnecessary. if you pc'ed correctly then there's nothing living in the jars. if there's nothing living in the jars, there's no need to cool them down to slow the growth. just cover em and stick em somewhere.

Some people say that even if everything dies during PCing , contams could leave toxins behind that could be absorbed by mushrooms and make these risky for your health. It's hard to prove and I guess that would be very unlucky but anyways...
On the other hand, even if there's a lot of contams in the fridge, it will all die during PC.
What's the good answer, I just don't know. Personnally, I just put a couple of freshly prepared popcorn jars in the fridge 20 minutes ago and they will stay there until tomorow for sterilization.

Were the jars contaminated before pressure cooking?!

Isn't it possible that popcorn jars that are only sterilized 24 or 48 hours after preparation grow contams? I mean, it's not sterile yet and some contams most likely get in while filling the jars? 1 or 2 days could sometimes be enough for contams to germinate?
If you say it's impossible, well, that's good news!

I can?t say it?s impossible, but ?d say it?s very, very unlikely that the corn contaminates if you soak it for 24 hours, even more so if your soaking procedure involves simmering.

Sure, just cover 'em with plastic wrap, but keep 'em on a shelf somewhere. If there looks like there might be any contam growing, PC 'em again. And, hey, if it does grow contams, you've just been alerted to the fact that you need to PC longer, -and- you didn't waste any spores.
