My bad, should've mentioned that the GLC was started from a clone. I do realize that it's not a monoculture but is not nearly as random as multispore. I'm just getting into agar work so once I have a few monocultures accurate side by side testing will be done.

That chart was based on mycelium temperature, not ambient room air temperature. My own tests showed about 83 to be optimum, but regardless mycelium creates its own heat, and glass jars are an insulator. If your room is around 75F, the inside of your jars will be above 80F, which is why you don't need an incubator unless you live in a garage in Alaska. RR

Would an automotive infrared pyrometer be suitable for measuring this? Like the digital laser ones at autozone/advanced auto?

Good question. I'm not sure it can read the internal heat of a colonized substrate.
I've considered adding a meat thermometer to my sub when I spawn so that internal temps can be read at my whim. I just think it would be cool.

With an IR thermometer, all you read is the surface of the glass, which would be much closer to your ambient room temperature than that in the center of the substrate. I have a few of those handheld IR pointers, and usually only see a degree or two higher on the glass, and up to ten degrees on the surface of large spawn bags, since more heat is created and the plastic doesn't insulate as well as glass.
